Beef tongue tacos/Tacos de lengua recipe
Makes 14-15 small tacos
2 1/2 lbs beef tongue
1/2 white onion, large
1 head, garlic
1/2 tsp black peppercorns, whole
4 bay leafs
5 sprigs of mint
4 dry chiles guajillos, small
8 cups of water
1 1/2 tsp kosher salt
1/2 tsp dry oregano
For the salsa
14 oz roma tomatoes
1/2 medium white onions
4 garlic cloves
1/3 cup dry chiles de arbol
2 TBSP white distilled vinegar
1 tsp salt
1/4 cup grapeseed oil + 4 TBSP
1 corn tortilla
2 tsp sesame seeds
To brown the tongue
1/2 tsp lard
1/2 tsp salt
Sides
8 green onions, pearl
Lard or oil
