You definitely have to try this swabian classic.
It took me quite a few tries until I managed to transform the original German Swabian apple pancake recipe into a gluten-free and vegan version that really tastes the same as it used to. It's a recipe from my childhood. I prefer to serve the apple fritters fresh from the pan with a little vanilla sauce. However, a berry compote is also suitable as a side dish.

Ingredients Recipe for gluten free and vegan apple fritters / apple pancakes
Wet ingredients:
200 boiled potatoes
400 ml milk
100 ml sparkling water
Dry ingredients
300g oat flour
50 rice flour
50 - 100 g coconut blossom sugar
50 tapioca starch
50 g potato flour
Half teaspoon of salt
About 15 g baking powder
(Olive) oil to fry.

For sprinkling sugar on top use fructose sugar or coconutsugar mixed with a little bit of tapiocastarch. Blend it to convert the sugar into powdered sugar. Or use maple syrup instead.
