This recipe for canned dill pickles is really easy and delicious with simple steps to fill your winter food pantry! Also, tips on how to preserve them the hot water bath method and how to keep the pickles crunchy too!
**Update to Brine Recipe**...The original recipe called for 8 cups of water, to 6 cups of 5 % acetic acid distilled white vinegar. As per newer canning safety guidelines, the ratio of vinegar to water should be 1:1.

Recipe that I used: (Updated Recipe as per Newer Canning Guidelines)
Brine:
8 cups water (use bottled water if you have chlorinated water)
8 cups white vinegar (at least 5% acetic acid)...You may try a combination of half apple cider vinegar and half distilled vinegar as long as both vinegars are 5% acetic acid...the apple cider vinegar is a little more mellow than the distilled but will result in a darker brine.
1/3 cup pickling salt
1/3 cup, plus 1 & 1/2 tbsp's of granulated sugar ( you can adjust sugar to your taste...the sugar helps cut down the sourness from the vinegar.)
To each quart jar add:
1 tsp mustard seeds
1 tsp black peppercorns
2 garlic cloves (3 if they are small)
2 heads plus a few ferns of fresh dill
1 grape leaf (Optional)..they contain tannins which help keep pickles crunchy
1/4 tsp red pepper flakes (optional)
Approx. 6 lbs. of pickling cucumbers, washed and prepared.
Pack jars with the above ingredients, bring brine to a boil, fill jars up to a 1/2 inch headspace, removing air bubbles then readjusting brine level. Wipe rim of jar with clean cloth, put on lids finger tight and then process for 15 minutes in a hot water bath canner (10 minutes for pints). Remove jars from canner once time is up and place on a tea towel on counter and leave for 24 hours before storing in pantry.
Makes 6 or 7 quart jars.

Another wonderful video Alana. Thanks so much and it made me remember my Grandma, in Wisconsin, when she made pickles in the summer from her garden for us when we came up from Florida to visit her for 2 weeks. Thank you for bringing back some great memories for me.

Hi there, thanks for the recipe. I normally make bread and butter pickles but my husband is always asking for dill. I don't eat them myself and wasn't really sure what kind of recipe to use but this one sounded real good. I can only find Kirby cucumbers right now at one place and they must have been a little larger than yours because I really couldn't fit very many in a quart jar so I just used half gallon jars. Using such big jars I wasn't able to water bath so will just put in fridge. I did use extra crushed red pepper as my husband likes hot pickles so hopefully these will be great. Will update once we try them.

I made these last week. I had one jar that didnt seal so I put it in the fridge and tasted it today. This is the best pickle I have ever made. I have used Mrs Waggs in the past and her stuff is way too salty for me. These are just fabulous. Thank you for the video

Love your videos. I don't do pickles as I'd be the only one to eat them, and only occasionally, but it was fun and instructive to watch. Did you mention making cucumber hotdog relish from overgrown cucumbers in one of your videos? I'd love to see a video on that if you have one!

Does boiling change the taste or cook the pickles? I've been doing it with hot water this year but I don't know if they are properly sealed

Can I use just a salt water brine without the vinegar four tablespoons of salt to a quart of water? The recipe looks amazing I really want to try it 😁

Also if the cucumbers aren't room temperature, they can break the jar when you water bath them

I have been seeing a lot about the vinegar needing to be equal parts with the water now days (for safety) since the manufacturers have diluted the vinegar to 5% (instead of it being 6-7%). Do you have any insight on this? I noticed your recipe is not equal parts water/vinegar. My grandma gave me her very old bread and butter recipe which would also supposedly not be suitable for canning but refridgerator pickles only. Thank you!

Wow Alana that is amazing well done you sure do bring back a lot of memories. Uummm could you or would you explain your brine??? Dad always made his to the point that it would float a potato or an egg we never made dill pickles only mustard and chow chow and bread and butter watching you I could actually smell the wonderful aroma wow but what we did do was just pickle or salt down the cucumber in a 5 gallon bucket put a layer of cucumber layer of salt till the top fill with a brine put a cover on them with a brick as a weight keep them submerged then cover and let them set for 3-4 months mmmmmm absolutely delicious haver you ever????? Hi David! Thank you so much! That is super interesting about the brine being able to float a potato or an egg...that must have been how he could tell he added enough salt maybe? My Mom and I tried pickles like the ones you describe here...they were almost like a kosher pickle...soft, kind of sour but delicious! Like ones you get from a Jewish deli...so good! My Grandma always made crock pickles too and my Mom said she used to sneak into the root cellar with her friend and they would eat the pickles before they were even ready! 😂 The brine that I use is just a mixture of vinegar, water, salt and sugar and that just gets added to the cucumbers but they still have to sit for about 4 to 6 weeks before eating them. @@alanacawker-therusticwife yes it was see we raised our own meat and we salted the pork so yea it was to make sure the brine was salty enough we would butcher a beef a pig and a goat and some chickens Plus we would 2 gallons of pickled eggs 2 gallons of pickled onions my goodness how times have changed eh ….. thank you

Once I finished the pickling process and I’ve added the brine to the quarts boiled the seals and tighten up the jars, can I water bath the processed jars the next day? Thank you for your tips.

Hi Suzie...thank you for watching! I wouldn't process them the following day as the brine in the jars will cool down and then when you put the filled jars into the boiling canner the next day, the jars could crack. Also, I think the processing time would have to be longer since you would be starting off with cool brine and cucumbers...it would need extra time to heat up again to ensure a proper vacuum seal on your pickles. What happens if I only got the pickles up to 180degrees. Can I put them back in and bring them to a boil of 212

Good morning! I have been reading about a process called low temperature pasteurization where you process your pickles in the canner at 180 agrees F (or up to 185 degrees F) for a longer duration of time, usually 30 minutes. Apparently, this is supposed to be an effective way to preserve your pickles and keep them crunchy too! A side note is that this method should only be used for approved recipes and not low sodium pickles it seems. I haven't tried this method but I would like to after reading the article! Hi there! These pickles are shelf stable for several years, although the quality (mostly texture) may start the dwindle after about a year or so. They are still fine to eat though, providing the seal is still good. I go down to the pantry periodically and check the lids just in case one had a faulty seal and I didn't realize it. Hi there...boiling the filled jars is called hot water bath canning and it is a method to ensure that any pathogens are destroyed. Some pathogens are not sufficiently killed off by the acid in the vinegar used to make the brine, but are killed off from the boiling water and length of processing time prescribed in the recipe for whatever you are canning. Hot water bath canning also ensures a proper seal for your jars rendering them shelf stable. I hope that helps! Thank you for watching and have a lovely day! 🌻😊
