EASY CHOCOLATE CAKE RECIPE ►
10 ounces (284 g) All-Purpose Flour, 2 cups spooned in and leveled
14 ounces (397 g) Granulated Sugar, 2 cups
4 ounces (113 g) Cocoa Powder, 1 cup
1 1/2 teaspoons Baking Powder
2 teaspoons Baking Soda
1 teaspoon Salt
2 large Eggs room temperature
8 ounces (227 g) Buttermilk, 1 cup
8 ounces (227 g) Hot Coffee (or hot water), 1 cup
4 ounces (113 g) Vegetable Oil, 1/2 cup (Add 1 extra ounce for a moister cake)
2 teaspoons Vanilla Extract
STABILIZED WHIPPED CREAM RECIPE ►
16 ounces (454 g) Heavy Whipping Cream, 3 cups
3 ounces (85 g) Powdered Sugar, 3/4 cup
1 1/2 teaspoons Vanilla Extract
1 1/2 teaspoons Powdered Gelatin, KNOX or something similar
2 Tablespoons Cool Water
1 1/2 teaspoons Heavy Whipping Cream

6 ounces (170 g) Semi-Sweet Chocolate, 1 cup
4 ounces (113 g) Heavy Whipping Cream, 1/2 cup

I'm a mom of twins. I always make their cakes for their birthday. My family always say you made two cakes? And I always say YES they are two separate people. Last year when my twins turned 11 I made my daughter an icecream cake and it was so yummy. I made my sun a chocolate and marble cake with chocolate ganache.

I made this cake today. Now I know what she meant by "work fast" because as I was ready to put the cake in the freezer, the middle layer of ice cream started melting and the frosting began to separate. Also the the measurement for the stabilized whipped cream and chocolate ganache is excessive. You can get away making half the amount and it'll still be enough for the cake. Still, thanks for this wonderful recipe. It was easy to follow and looks like it was made by a a professional. My 4 year old son keeps saying, "this is the best birthday ever!" So thank you for that, Liz! Update: I just wanted to add that I used Hersheys special dark + the hot coffee and the chocolate flavor came out a little too intense (adults enjoyed it but the kids did not). Hershey cocoa would probably work better. This cake recipe is moist and dense for those that are wondering.

This cake was super delicious. I swapped the coffee with chocolate milk and it tastes really good. I made a lactose free version and it was a show stopper. The cake tastes better when frozen also. Will definitely make it again. Thank you for the recipe!

My mum makes a similar chocolate cake, but instead of coffee she uses hot chocolate. I'm not sure if it gives the same effect but I love it!

My daughter wants ice cream cake (with a layer of chocolate cake) for her birthday. I tried another bloggers recipe THREE!!! times unsuccessfully, so I’m trying your recipe now. I have to nail this, I really don’t want to disappoint my 4 year old. The cake is in the freezer now, fingers crossed!

We used to have solid ice cream cakes from dairy queen. I remember when i was visiting my aunt we had an ice cream cake with actual cake. I can tell you its like 100x better. I can't find any cakes like that again so i gotta make it myself!
