Thanks for the demo on deep frying sweet potato chips, they look lovely! I got my thin slices of sweet potato covered in olive oil with a drop of rapeseed oil, sprinkle of sea salt and Himalayan salt, tiny dash of chili, dry rosemary, oregano and mint, and then baked slowly in a preheated oven. My first attempt was baked at temperature 180'C, but that was too high (cooked too quickly around the edges!), so I turned it down to 150'C. Watch them as they cook and brown very quickly, but perfectly to a light crisp when sliced especially thin. They turned out delicious, and topped my chicken stew lovely. I definitely encourage baking them as a healthy alternative!

I sure didn't know about the soaking and boiling! Will give it a try. My mom made these as an after school snack and sprinkled them with cinnamon sugar.

Hi! Itried this method. And its really yummy, delicious and very attractive in color. May i ask, what kind of oil is the best to fry for this chip?

Glad you tried it and liked it! I don't think there is a "best" oil it all depends on your preference and budget. Avocado oil is probably the healthiest but it is expensive. I normally just use vegetable, peanut, or canola oil, although those aren't as healthy.

They will stay crispy for 4 to 6 days. Not as long as store bought chips because those are packed and sealed with a special gas "nitrogen". I have tons of videos here on my channel :) Find them here: kzfaq.infovideos

That's really smart. The salt permeates the chips meaning less waste later (when you salt the fried chips and salt inevitably falls off) and the vinegar gives them a very fresh color and nice crunch. I use white vinegar rather than ACV.

They stay crispy for 3 to 5 days where I live. You will just have to make them and see how long they stay crispy where you live.

I have tried to deep fry directly without soaking knor boiling. It still crunchy and soft. But when I tried to dry off then I deep fry its like rock its hard to eat 😁😁

You are welcome! Homemade chips just won't last as long or remain as crispy as long as store bought. But these will stay crisp for a few days.

I saw that you put them to a boil a second time but you never mentioned how long do I let them sit in the 1st pot of boiling water before I turn it back on to boil for the 3 to 4 minutes. Please clarify what you did during that step. Is there anything to make them sweeter? Thanks. FYI I used the regular hand slicer to slice the sweet potato as the sweet potato was really thin.

They only boil one time and only fry one time. The first part it only soaks in cold water (20 to 30 minutes). Then they boil in water for 3 to for minutes. The next part they fry in the oil the time will depend on how many you are doing, go by what I said in the video, there won't be very many bubbles and you will be able to feel how crisp they are with the ladle. There isn't any second boiling. or second frying. If you rewatch the video it is pretty straight forward. Make sure to listen to my instructions. You can sprinkle on a little bit of cinnamon and sugar if you want to make them sweeter.

Hello Matt I’m fun of yours ,I’m from Philippine,I’m very impress how you me an idea boiling before fry,it give really extra crispy ,but the problem I had after boiling and set a side , my become dark or having little dark patches which is not good .hope you can help me with this ,I put salt in the water the one that boil.thank you and keep safe

Hello, I am not sure why it is getting dark patches on it. Try boiling them without salt. And only boil them for a couple of minutes.

You can try it, it won't turn out as good, but I have definitely made chips in the microwave. Recipe Request: have you ever tried making bread using Valtrompia? While I was wandering around eBay, I found a bunch of these things (tube loaf pans) super-cheap, so I bought two. Then I tried hunting up recipes here on KZfaq and the videos for using Valtrompia were very disappointing so now I'm wondering if I shouldn't have bought them. Still, if Matt can do it, I can probably do the same. Are you game for trying to use tube loaf pans? I hope so!

@@inthekitchenwithmatt Search "valtrompia" on eBay to see what they look like (they sell inexpensively). They are shaped tube pans that bake while in an upright position. Apparently they are good for making both quick breads and yeast breads. The problem is that I'm not seeing much description (or any proper recipes) about how people succeed with using valtrompia.

@@breadispain454 Have you watched my older videos? I have music in those. Enough people were complaining about music and didn't want it, so I have kept it out for the past few years of videos, and it had nothing to do with the volume of the music. But the older ones definitely have music. :) Glad you have tried a lot of the dishes! :)

Hi Charles, not I don't, but you can prepare these the same wait, but instead of using the oil, cook them in the air fryer or oven. In the air fryer use 325F and cook them for 8 to 12 minutes until crispy. In the oven, use a lower heat 300F and bake them for 20 to 25 minutes. In each instance it is a good idea to give them a light coating of olive oil.

Vegetable oil, you can use pretty much any cooking oil. Canola, Avocado, Peanut, Coconut, etc.

If you have one, give it a shot! I don't see why it wouldn't work. They will taste different than fried chips like these, but would be healthier haha.

I just tried some in the oven along with some zucchini...bad idea! They burned on the ends and not crispy. I'm going to try your recipe

I followed all these steps, except the potatoes didnt dry to the end, The final result was brunt and some had the sides cooked but the middle uncooked, may i know why so?

Most likely you didn't follow the steps exactly. And your oil was probably too hot or you left them in the oil too long. And possibly they weren't cut thin enough.

Sweet potato itself is a pretty healthy food. But once you deep fry it, its a calorie bomb, i, e, junky food. Can you air-fry it in stead?

It entirely depends on the oil you use. If you use coconut oil or avocado oil it isn't junk food. It won't be as good in the air fryer but it can be done.

I haven't been soaking mine. Is it just like cooking rice without rinsing? I never make rice without rinsing dozens of times... feeling like I should have been doing this all this time.

Same idea, to get ride of the starch. But with rice you are also getting rid of other things like little rocks and pebbles.

As I understand, you get a healthy sweat pototo, boil the goodness out of it and then fry any remaining goodness out of it?

Nope, that is incorrect. Are you planning on eating it raw in the first place? It has to be cooked regardless. With that said, who said these were super healthy? They are chips! But they are healthier than normal potato chips.

They don't turn out nearly as well in the air fryer. But at some point I will make an air fryer version. But basically you follow the same exact steps but instead of putting them in the oil, you lightly brush them with oil and place them in the air fryer. Set it to 325F/162C and cook them for 8 to 10 minutes each side until crispy.
