Learn how to make finger licking Nigerian vegetable soup using three different vegetables.
Nigerian soup is a versatile dish that is made with fresh vegetables and fresh meats,it can be enjoyed with rice,fufu,yam,plantain etc.
This soup is made within minutes especially when the vegetables are ready.. so get your cooking utensils ready let’s get it done ✅.
List of ingredients for vegetable soup👇🏾
Fresh ugu ( fluted pumpkin)
Fresh waterleaves
Fresh garden leaves 🍃 (
Crayfish
Scotch bonnet pepper 🌶️
Smoked Fish
3 bulb of onions 🧅
Beef feet’s
Shaki ( beef tripes)
Maggi powder
Palm oil
Salt to taste
Preparation 👇🏾
1) Wash the tough meats
2) Add them into the pot
3) Add onions 🧅
4) Maggi powder
5) Salt 🧂 to taste
6) Add water & stir
7) Cook to soften like 90%
1) Pluck the vegetables
2) Wash them nicely
3) Slice the ugu ( fluted pumpkin)
4) Slice the garden egg leaves
5) Slice the waterleaves
6) Squeeze excess sliminess from the waterleaves
7) Set the 3 vegetables aside .
1) Grind or blend pepper,onions ,& crayfish
1)Remove the meats from the stock & set the meat aside.
2) Make sure the meat stocks are not much
3) Add the dried fish
4) Add the blended pepper mix
5) Add palm oil
6) Stir & cook for 10 minutes
7) Add the squeezed waterleaves
8)Add sliced onions and extra chopped peppers 🌶️
9) Cover & cook for 3 minutes
10) After 3 minutes,add the rest vegetables
11) Add the cooked meats
12) Stir & taste for salt & cube.
13) Cover to cook for 2-3 minutes
Serve & enjoy with hot semolina.
