Serves: 5-6 Bowls about 10-12 cups
INGREDIENTS ---- (All can be found in your local grocery)
• 2 tbsp. of Olive Oil
• 1 whole Onion, chopped
• 1 Green pepper, chopped
• 2 cloves garlic, minced
• 1 tbsp. chili powder
• 1 tbsp. ground cumin
• 2 tbsp. dried oregano
• 1 can diced tomatoes
• 1tbsp. Kosher Salt
• 1 tbsp. ground pepper
• 2 c. vegetable broth
• 1 can tomato sauce
• 1 tsp. Jalapeno chopped (optional)
• 1 tbsp. sweet & sour sauce (optional)
• 15.5oz (1 can) Black beans Drained
• 15.5oz (1 can) Pinto beans Drained
• 32oz (2cans) Kidney Beans Drained
• 1c. corn kernels (fresh, can, or frozen)
• 1 Yellow bell pepper chopped
• 1 whole tomato chopped
• 2 green onions, chopped
• 3 tbsp. cilantro (save a tbsp. for garnish)
• (You can top with sour cream and cheese for extra flavor) Optional
