If I am replacing the original metal panel door with a custom cedar wood door, how do I determine how much spring level I need?

Start by obtaining the weight of the door. That is where spring sizing begins. You will also need the length and height of the door. You will also need the radius of the track and the details of the winding drum at the end of the torsion tube. I am sure these guys can size it for you. The calculations are available on the internet.
