If Korean BBQ and Japanese Shabu Shabu had a baby, you'd get this glorious Thai communal meal.
Ingredients-
½ lb pork belly, Thinly sliced
½ lb ribeye, Thinly sliced
½ lb pork jowl, sliced
½ lb shrimp, peeled with head on
½ lb squid, cleaned and sliced
Assorted fish balls
5 oz enoki mushrooms, trimmed
4 oz shitake mushrooms, sliced
2 cups Shanghai cabbage, sliced
2 cups Chinese broccoli, roughly chopped
1 cup Chinese chives, chopped
1 cup cilantro, chopped
1-2 pkgs glass noodles
Water for soup base
Nam Jim Jaew sauce:
⅓ cup fresh lime juice
3 tbsp fish sauce
2 tsp sugar
¼ cup shallots, thinly sliced
¼ cup cilantro, finely chopped
1 tbsp dried ground Thai chili
1 tbsp toasted ground rice powder
Nam Jim Seafood sauce:
8 cloves garlic
¼ cup cilantro root, stem, and leaves, roughly chopped
3 tbsp fish sauce
2 tsp sugar
½ cup lime juice
6 birds eye chilies, roughly chopped
Steps-
Prep the dipping sauces: For Nam Jim Jaew, combine all ingredients in a bowl and divide into individual bowls for serving. For Nam Jim Seafood, combine all ingredients in a mortar and pestle or food processor and divide into individual bowls.
Arrange 3 platters: one for raw pork and beef, one for shrimp, squid, fish tofu and balls, and one for veggies and glass noodles on another.
Preheat your moo kata grill or two burners with a grill pan and pot on another. Pour water into the reservoir and add veggies and proteins of your choice.
Grill and dip items, and keep adding items to the water to build a flavorful soup as your meal progresses.

Traditionally we put a chunk of pork lard in the middle or wipe it around a skrillet to make it less sticky. Moo Kata also really goes well with Thai Suki dipping sauce which is great for kids (orange color with sesame one and not too spicy) Just for the tip! ;D

i have been craving this for so long my friend is from thailand and we used to do this all the time. I live for the cantonese suki sauce she gets for us. Honestly, when we go out to any restaurant with her that serves hot pot or kbbq, she brings a container of that sauce in her purse for US LMAO

Traditionally we like to put a 'knob' of pork fat (from pork belly) on the very top of the pan to render the fat and let it coat the pan a little to prevent the meat from sticking. And even when do it with non-stick pan, we still put a knob on because, you know, the flavours AND when that knob of fat shrinks and become crispy it's SOOOO GOOD!! Dip it in the sauce, any sauce you like and chomp on it!

Oooh, I'm so happy with this clip! My favourite for Moo-ka-ta is corn! you can slide corn in to wedge and put it in the water at the beginning of your cooking, it will make the soup sweet and at the end of the meal, you will get the tasty corn ever!!!

Hearing she said 'Moo Krata' and 'Nam Jim Jaew' made me realize that she doesn't speak Thai haha. And that's okay! I love her. (No bad feelings and I'm not shaming her. I think she's so cute and it's nice that she's keeping the culture that's part of her through food. Food is the best part of a culture! lol Imagine knowing a person that's half or has part of your ethnicity, you would be wondering, 'Oh! does she speak the language too?' It's one thing that bonds people of the same culture together but not necessarily the only one, food does too!)

She's half Filipino and Thai. She had may got Thai and Filipino languages by her parents in the basic level just like any immigrant kids. If you don't know her background so much, I recommend to watch "Immigrant Corned Beef" about her and her family deeply in her own channel, Just Eat Life. I will put it down below : m.kzfaq.info/get/bejne/pbmRjLp8vrS7mIk.html

The dipping sauce "nam jim seafood" is actually named like that because back then we, as Thai people, dip SEAFOODS with that sauce, then we try just eating another protein/meat with the sauce also, and it is so delicious! "Nam-jim" means dipping sauce. And we put adjectives after the noun in Thai, so seafood is actually placed after the word nam jim. So it's exactly "seafood dipping sauce"
