Millet Ambali (fermented daliya) is the best probiotic food we can have. Anyone with chronic problems can take millet ambali ans that will help recover faster.
Millet Ambali is a type of Fermented Millet Daliya made of millet grain - it is a 3 step process - soaking, cooking, fermentation. It is very good for digestion, stomach and gut health. It not only loaded with energy but also helps body recover.
Millet Ambali(Fermented Porridge) is one of the best probiotic foods shared by our ancestors. This gut-friendly soul food known by many other names as Millet Dalia or Ganji or Kanji and consumed as a wholesome breakfast meal or as an early dinner.
Eating millet daily will provide you with several health benefits. It helps women to fight off heart ailments post-menopause.
For those who are health conscious and are wary about what they eat, experts suggest that millets should be a part of their daily regular diet. Millets are nutritious, non-glutinous (non-sticky) and are not acid-forming foods, thus making them very easy to digest.
Ambali can be served with dal, sambar, rasam, buttermilk, curries etc. However, hot rasam or sambar shouldn't be added as it kills healthy microorganisms.
You may store your ambali upto 20 hours at room temperature and after that refrigerate it. Once you refrigerate your ambali, it no longer remains fermented. It can then be consumed as normal porridge without any benefits of fermentation.

Foxtail Millet is a versatile grain that can be fitted into our breakfast, lunch, and dinner. For breakfast you can make upma, for lunch you can make pulao, khichdi, biriyani and for dinner, you can make roti out of it. You can include foxtail millet 2 to 3 times a week.

Boil kar ke bhi kha sakte ho lekin aisa karne se us ki nutrition value kam ho jati hain . Better to consume without reheating or refrigerating.

Yes you can keep leftover ambli in the fridge . To get maximum benefits should be consumed at room temperature. Heating or cooking might loose its nutrients .

No . Water to be added while cooking only . Once fermented you can add anything of your choice .
