Welcome to Auxhart Gardening! I’m Rachel, a small-scale southern gardener growing near Clemson, SC, zone 7b. I mainly garden in-ground, with containers as secondary production spaces.
Knowing where your food comes from is powerful, and empowering, and I believe we can change the world through gardening education.
The agricultural system is broken; we’ve monocultured nearly every major crop, forcing the use of chemical pesticides and inorganic fertilizers to maintain large-scale food production. I believe there’s a better way.
By teaching people to rely on themselves, even just a little, for their food supply, we might be able to create some breathing room for our strained food system, allowing for change to start happening.
By educating people about where food comes from and how to grow it, we can raise awareness about our broken agricultural system and form a community that understands how to fix it.
By forming a community, we can move toward creating real change in the world.
My goal is to educate; yes you can grow food, yes you can do it without chemicals, yes you can do it in your backyard or on your windowsill. And yes, that can make a difference in the world.

I have some garlic growing in my garden at the moment so thank you Rachel for the ideas on how to store it 🐱 😻 Thank you to your cats for the great back ground entertainment 🤣 I had to rewind the video in one part cause I was watching them haha.... they are adorable. Also when the video started the very first thing I noticed was the board your Dad had made..... beautiful.

Yeah I'm honestly so proud of my dad. He's not even trying to sell them or anything, I just want to show off his work :D. And the cats always steal the show; they have to be all up in everything I do.

Another great video! On two different occasions, I purchased two NESCO dehydrators 2nd hand for $20 each and I love them. Their simplicity of operation is so useful and economical. Additionally, I purchased extra trays and run both units simultaneously drying my home grown herbs, onion greens (resulting in the most delicious green onion powder you can imagine), zest powder from lemon peels, dried lemon slices, peppers for powder, and celery leaves to make celery powder and celery salt, all home grown -- plus so much more! I encourage you to seek out a dehydrator. The units I purchased were in the box and had hardly been used. I run the trays through the dishwasher periodically, and can use up to 12 round trays per unit. They run quietly around the clock and are so much more economical to use than an oven. I do have a dehydrator these days! I filmed this video something like two years ago. However I've heard that even so, garlic and onions shouldn't be done in a plastic dehydrator because the smell will get stuck in the plastic.

I bought a 2lb bucket of peeled garlic. Thanks to you it won't go to waste! Also, after watching this video, I must plant a whole bunch of garlic this fall, now that I know the ways to preserve a ton of it! Thanks!

Thank you so much for the info regarding the garlic turning blue in vinegar, and also the tip on keeping a towel in the oven door. I tried drying onions in my oven and it took 3 days cuz I kept the oven door closed the whole time 🫠

Awesome! Thanks for all the great info! We are going to pickle some garlic now! I must say, a silicone garlic pealer will peal dozens of cloves of garlic in seconds! We love ours and for $4 on amazon you can gel two!!

Great video! You can also ferment your garlic in salt water which is very easy and produces beneficial bacteria (so good for the gut).

This is what I tried first and I love it. But to do a years worth off garlic (I use for blood pressure) it takes up too much room in my refrigerator. Do you refrigerate yours.

@@zeeshazila7890 It ferments at room temperature and then it goes in the fridge to slow down the fermentation process. There are other ways I figured out: freezing peeled cloves, extracting garlic oil. Also canning pickled garlic can be kept in pantry for years until opened.

I've read that you have to be so so careful infusing garlic into oil. What's your method?

I haven't tried it my self, but the say if you chop some onion. And put it in with the garlic and vinegar it stays white xx

Hello Rachel. I came over from Scott's channel. Ironically, it was the episode where you just helped him plant garlic for the first time. When you preserve the garlic with vinegar, do you add any water, or is it straight vinegar? Good to know about the garlic changing color prior to trying this method.

Welcome! It is just straight vinegar, no water. From what I've seen the color change isn't too extreme either, and it's been so convenient.

Hi--a delightful amount of information. I just grew some garlic this year and it should be ready to harvest in about 3-4 weeks. Do you save some of your harvested bulbs to plant for the next season? Thanks for your help. Jesus bless.

Hi Sandra! Thanks for your comment. I did not end up planting any of this garlic in my new space this year because I saw a few signs of mites and I didn't want to transfer them to my new garden. If I don't see signs of them on my garlic this year, though, I'll definitely be saving my own for seed stock.

What variety did you grow? I had good luck with the Persian Star here in VA, expanding this year, added Music and Elephant, along with propagating most of last years crop. Dehydrator took 8 hrs at 125 to dry enough to grind. There is no comparison to store bought, most ground garlics say from China too boot.

To be honest, I didn't keep a good enough record, I can't remember what variety it was. I'm trying two different varieties this year: Silver Rose Garlic and Dixon Softneck

There’s a hanging solar dehydrator on Amazon. Got mine for around 30 dollar’s. You can get 4 to 8 tiers. Just hang it in the corner out of you way.

My son and his wife grow Organic garlic and we use a lot of garlic when we cook dinner. I just got my first delivery and I only kept two large bulbs. The rest was a gift to the the person next door. I watched so they know how to keep it fresh when they order a large box. I watched one video before yours. They broke it up and put cold white vinegar in the jar. Why did you boil yours and they didn’t? Does it make a difference? Thank you.

I think boiling it first kills more of the microbes in the jar and on the surface of the garlic. It will also self-seal the jars (if you're using canning jars) until you open them for the first time.

You could find space for an inexpensive dehydrator. Does your PO Box hold oversized packages?

It would be better to use silicone sheets or parchment paper rather than foil. Leaving oven door cracked open with towel is also good to keep garlic from getting too hot.

Nice video. I have read that the white vinegar is processed with gmo products to make it? Is there some reason you use white instead of the organic apple cider vinegar? Thank you for posting I am going to try some of these procedures

White vinegar is made from grain alcohols, so if the grains were gmo, I guess that would be true, but I'm not sure if the average consumer has any way of knowing for sure. You could try with apple cider vinegar, but it might change the flavor of your garlic. I don't know for sure though, so if you try it, let me know!

Fresh garlic will always be the most potent, however in the years that I've been doing this I've found that making these products yourself gives you a more potent version of them than you can find in the store. People are consistantly blown away by a whiff of the garlic powder I make; it makes store-bought seem like nothing. The vinegar jars are convenient, and sure the garlic does lose some potency, but it's still quite garlicky. I'd also say I use fresh garlic whenever possible, but the jar garlic is so nice to have around, and sometimes powdered garlic is going to work out better in your recipe. These preparations also last far longer than fresh garlic; my partner has been using up a batch of jar garlic from more than two years ago and it's still good.

It needs to be hot to kill anything on the surface of the garlic or in the jar. If you plan on using your garlic very soon (within a month or less), heating isn't as important since vinegar is already acidic, but personally I'd just use it fresh at that point.

It will be less pungent after awhile, but I haven't found it to taste a lot like vinegar at all if I rinse it off.

I think the blue is the sulfur compounds and off grid with Doug and Stacey has a you tube about the colors when preserving garlic
