Where can I download the past 30 days of all those stats? Say the traffic if I want to troubleshoot Googlebot; I want to watch every move it has made, where it started, where it stopped, all the pages it crawled?

Excellent question, Craig! You can download the statistics via SSH or FTP. They are located in the Logs subfolder of each domain.
