KZfaq has tempura videos from masters. Fry with cottonseed oil and sesame oil 1:10. Also.... add a pinch of salt and sugar to season the shrimp. A little goes a long way.

What I like about a video like this is that it finally answers my question of how much oil I should be using. Most recipes seem to say "3 inches of oil" or around that mark for a deep-fry effect, but you've shown that you don't really need that tremendous an amount. We'll see how my dinner ends up like tonight. Edit: Looks like I had some difficulties. It took me awhile to get the hang of the 'flecks' method, and I feel like my batter had been way too thin; I wasn't getting anything on the shrimp (and my veggies) until, in a panic, I thickened the batter with extra flour. I also felt like I had to turn up the heat in order to get it to cook properly, instead of turning it down. It wasn't until I was halfway through my shrimp supply that I'd re-watched the video, and saw how significant it was to 'gather' the flecks and lay the food on top of it. Food was coming out much better towards the end when I realized this.

@@bogdanrusu3669 As someone who made this last night I don't think it would be essential, but it does allow for an even cook and stops the shrimp curling, which makes it easier to eat/present. When I pinched them it almost feels like cracking a knuckle in your finger so it's quite easy to do, although very fiddly considering all the prep work that shell on prawns require!

Of all the video instructions I have seen so far, your trick of frying the batter first to wrap around the prawns produces the best looking tempura in my book. Thank you !

use high heat so it doesnt soak too much oil. put the shrimp in the batter, pour some into the oil stir it with chopstic and immediately fry the shrimp.

I have watched several videos of shrimp tempura. Yours is very very interesting. Adding the batter to the oil then frying it onto the shrimps is a unique idea. I will be trying it. I've had trouble with the frying oil washing the wet batter off the shrimp when emerged in the oil. This looks like it will take care of that problem. Thanks😊

Came back to watch again. Though my shrimp was very tasty, it didn't quite turn out like yours. So I will by trying it again, but in a nonstick skillet this time. What I should have done in the first place. So I will continue to come back and watch this very informative video whenever I need to.

Looks really good! One thing that I've seen a lot of folks making tempura batter do is use sparkling water to make the batter extra light. I'd never thought about precooking some batter and rolling the shrimp around in it! That's a really good way to get layers of crisp.

Yea, the place I used to visit in Tokyo... the guy would actually use his bare hands to roll the shrimp around the flakes in the oil. I still havent figured out how he does that.. but good tip with the sparkling water. I will try that out. Thanks Nick ;)

I love this recipe especially the idea of pouring some batter in for the flakes. That was genius. I would put some club soda or some form of carbonation into the batter though because it makes it even lighter.

So I made this last night and it was fantastic! I used Panko breadcrumbs on half of them which made them even crunchier (the crunchier the better in my opinion). Next time I do them I'm going to add a few spices to perk up the batter and maybe marinade the prawns in some soy sauce or something for a bit beforehand. I will definitely be cooking this more!

We just tried this recipe. Ours didn't turn out quite as pretty as yours, but pretty close. They were delicious though. Added a little more salt to the batter then fried some thinly sliced squash. They were great too. Thanks for the recipe. This is how we will be cooking our shrimp from now on.

Thanks for your very useful tutorial! I’m gonna make shrimp tempura for nabeyaki udon. Makes sense to flour the shrimp first before dipping them in batter. Last time I tried to make tempura, the batter didn’t stick onto the shrimp.

Yes, I was quite intrigued the first time I saw it as well. The tempura flakes stays sticky (even as it is frying in the oil) so it it easy to wrap around things. Well, hope you get a chance to make it home :D

If you chill your flour too, the coating is even crispier! It's something about the shock of the hot oil on the cold batter that does it.
