Try cooking them without the water pan. Pay attention to the internal temps. The drippings drip onto the fire creating a natural smokey flavor. Last week I smoked three 1 pound patties of ground beef for stuff like spaghetti, sloppy joes, etc. It made boring spaghetti fantastic!!!

I cooked mine on the bottom grate but I use a Fire Dial heat deflector instead of the water pan. I kept my dome temp at 300-325 and cooked till internal temp of 165. Skin ended up crispy and they were very juicy. I highly recommend a Fire Dial for any WSM.

@@brgable I just purchased a 22 WSM and fire dial. I’ve heard good things about the fire dial. Do you ever use the water pan?
