How to Smoke Dry Rub Ribs on a Traeger | The Healthy Memphis Style Rib

2 racks St Louis style ribs
Yellow Mustard
Kosher Salt (optional)
Kinder's Buttery Steakhouse Rub
The BBQ Rub Seasoning
1. (Optional) Begin by prepping the ribs. Remove the membrane from the back of the ribs and trim off any bits which may burn over a long cook.
2. Season the ribs. Begin by applying a binder, like yellow mustard, lightly over the outside of the ribs. Next build those layers of flavor. I used a dusting of Kinder's Buttery Steakhouse and The BBQ Rub, but feel free to use your own favorite rub! Allow 15 minutes for the rub to sit on the ribs before cooking.
3. Fire up your Traeger, or any pit, to 275° with a good pork wood, like Cherry wood. Lay the ribs on and allow them to cook undisturbed for 2 hours.
4. After 2 hours, check the ribs and optionally spritz them with water, depending on your pit. Continue this pattern every 45 minutes until the ribs are done (around 4-5 hours). Your ribs will be done when they temp 200-205 ° F and the probe inserts easily like a hot knife in butter. Remove the ribs and allow to cool for at least 20 minutes before enjoying.

I'm from Memphis, and I often do not use a binder when I do dry ribs. Sometimes I smoke then Texas Style with only salt and pepper. Then I use Malcom's seasoning as the final Dry Rub

Great video! I always do two racks. 1 sauced, 1 not. Honestly, I don't know which I like better. They both have their place. Can't go wrong with ribs!
