I am surprised as too how many people haven’t done this. I tried smoked Tri Tip before I tried brisket. You need both in your life!

One of my favorite things to make on the smoker. Just the right amount of food for my family and a much shorter cook than a brisket

Never thought about smoking a tri, but makes sense especially for smaller gatherings where a brisket is too much.

Thanks to Reddit, I tried this a few months ago and was just as surprised. Being from Texas, Tri Tip isn’t a thing. Well, I married a Cali woman, and learned about it. Now, she prefers it this way over the hot and fast that she grew up with. I prefer it too cause it’s way cheaper than brisket.

I've never cooked a brisket. I never wanted to spend all that money just to mess up brisket. So I "learned" or practiced rather cooking brisket using Tri tip. I friggen love Tri tip. I never made the switch to trying to cook brisket.

Did a tri tip yesterday like we do our brisket. WOW we were so amazed. Brought it to 185° the wrapped it for a few hours. Very tender. We couldn't afford brisket but the tip was very affordable. Thank you

What is funny, is here in California tritip sis more expensive than brisket. But in Texas and other parts of the country it’s the opposite.

I'm glad you tried it, one of my favorite cooks. Some said picanna would do the same but wasn't even close. Maybe I do this again over the weekend!

Looks amazing. I typically buy choice tri-tip at Costco. They're always well trimmed. The prime does look good though; I need to try it. I apply salt and whatever rub I am using then wrap it in foil and let it sit in the refrigerator 1-2 nights. Then cook it indirect with a little smoke. It is sort of in between cooking it over the coals and a slow cook. They always comes out awesome. Cut them super thin on a meat slicer too; takes it to another level.

I’m about to do my second one of these. First one was excellent. I am using better than bouillon straight out the jar as a binder. Then some hickory smoked salt and black pepper..

I cooked one yesterday on a Weber Smokey Mountain with coals and wood at the bottom and no water pan at about 300 degrees for two hours of smoke. I then pulled the center section off and placed the grate above the coals for a sear. It turned out perfect with my homemade chimichurri sauce.

If you wrap it at 3 hrs…its usually a 4 to 4 1/2 hr cook. And you can do 2 or even three and it won’t change cook time.

Typically, I smoke mine at 200 degrees until it reaches 120 degrees. From there I let it rest until the temp is back under 100 degrees. Then, I turn my Yoder Smoker up to 600 degrees and finish it off back up to 125 and pull it. Heaven!

I make mine like a brisket and it’s way better that way. I do mine on a Weber offset and it’s amazing. I have old school smoker’s but it’s cheaper on the Weber

I do tri-tip on my offset all the time now it is the only to cook it, better than santa maria style.

Perfect example that one method is not the only method. I'm still looking for ways to improve my grilled or smoked fish, especially smaller bass and larger blue gill, crappie too. Suggestions?

Nice video, Arnie! I have not had good luck with Tri tip……..but I recently started smoking it for 2 hours, then braising it in beef broth in an aluminum pan (sealed with Saran Wrap & foil) in the oven for 2 hours.

Sitting by my Kettle and she’s 138 degrees 2hrs in. Wrapping at 160. Anyone use butcher to wrap? Great vid and I do the same on the timing thing 😂

I usually smoke my tri tips, taking it to medium rare. I just can't bring myself to take it to 200+ like a brisket.

I would have used paper but was getting late, the foil helps speed up the cooking process.

I wish when the video say, “how to smoke a tri-tip, the video actually showed step by step how this meat was cooked. It didn’t show anything other than trimming and then put in the smoker and then taken out.

Sorry Arnie, it's just not my favorite cut. I'd rather do the brisket or if budgeting, a coulotte roast (picanha). But I'd definitely give this method a go with those cuts.

No this is blasphemy. Tri tip is meant to be cooked medium rare. Cooking it like a brisket dries it out because it doesn’t have the connective tissue and fat content to break down like a brisket. Smdh. This is sad 😢

@@TheGunther30 It’s not a tender cut of beef when it’s over cooked. That’s why it has to be medium rare. Say what you want about Californians, but we perfected this cut of beef over 100 years ago and this would get a Texan laughed out of a bbq comp or cookout.

After trying both ways, I prefer it smoked over Santa Maria style. You should try it before you knock it. Glad I have an open mind to try different things. Whew!

I live in California and I've cooked direct heat and indirect personally I prefer the infirect method I usually cook it for about 3 to 4 hours with charcoal,and hickory or apple wood, untrimmed fat cap up all through the process and it always comes out tender and juicy
