Stir-fried vermicelli dishes are among my favorite comfort foods. When done right, they are chewy, light and so tasty. I always have to have some sweet chili sauce with it, and so, I’ve just worked the sauce right into my recipe now and serve with some sriracha for some added kick.

Ingredients:
4 rice vermicelli squares (soak in water per packet instructions)
A few shiitake mushrooms (pre-soak in water the night before)
Garlic
Green onions
Chives
1 carrot
2 eggs
4 strips of bacon
Dark soy sauce
Soy sauce
Sweet chili sauce
Black pepper
Salt
