A few years ago when Thai green chilies prices went sky high all of a sudden, this is what I did too. The spiciness doesn’t lessen. It just becomes hard.

I tried freezing my chillies before. However, they became soft after thawing, and not as crunchy as fresh ones.

Thank you, I wash them and dry them in shade. once dry I chop and freeze in ziploc bag. Whenever we have to use I break a piece and use it in cooking.

hi - i followed the exact steps, but after freezing the chillies became dark green in color and don't look healthy. they were freshly-plucked green chillies before i froze them. any idea why this may be happening? thanks.

Moisture content makes black .. but you can still use them. They are not spoiled just lost their color.
