I read somewhere we could dehydrate the mothers and powder them use them as seasoning .i made like 40 or more fruit vinegars from dates to banana and passion fruits,,and i stored all the mothers in fridge,,i should tell you any vinegar i made with raw honey they became so delicious,,my favorite one is blackberry and passion fruit vinegar..it’s so easy to make vinegar from anything you can imagine.

I've maintained a "mother" of Kombucha on the counter for years with no problem. I got my "mother" initially from one of the store-bought bottles and have had a continuous brew going for more than 2 years. during the last year we stopped drinking it for ~6 months (life got in the way) and it just sat out on the counter the whole time. other than evaporation reducing the volume the pH was low enough that no mold has ever formed and a couple months ago I just brewed a fresh batch of sweet tea (the substrate for kombucha) and it took right off like nothing had ever happened. long story short, vinegar is a preservative and keeps almost forever, don't do anything crazy and you will have it for a lifetime.

@@stephenmartin2409 a Kombucha SCOBY is basically a Vinegar mother. the fundamental reaction is first converting sugar to alcohol (generally by yeast) and then the alcohol is converted to an acid (vinegar) by the bacteria. The advantage to Kombucha is you just put basically sugar water in and get the vinegar out in a 1 step process. conversely a lot of vinegars use one yeast step, to make a "wine", followed by a vinegar(ing?) step. I would imagine that you could do a vinegar SCOBY, however you would have to "train" your mother to deal with the base fruit juice. Sucrose (table sugar) is a disaccharide containing glucose and fructose, while most fruit juices are primarily fructose. Because of this the mother is going to have to adjust to the new food source and acidity before it starts converting efficiently. Short answer: It may work, try it out. You may have to cut the fruit juice with sugar water for the first couple batches until the mother adjusts.

So mother is a scoby ¿ I’m confused 😂 almost threw my half gallon apple vinegar away bc it 👀 like scifi jellyfish growing.

@@thuandao4243 pretty much yes. in vinegar the mother is the jellyfish looking thing that shows up in the bottle, while in Kombucha it is called a SCOBY. The main difference is the Vinegar is only made by Bacteria, where as Kombucha is made by both Bacteria and Yeast so they call it a SCOBY instead. Both look super similar as they are made from the same stuff. 100% look weird though, if you shine a light through the Kombucha you will even see little tendril things. just as an FYI SCOBY is actually an acronym for Symbiotic Culture Of Bacteria and Yeast.

Thank you. Just finished a 2.5 gallon batch using your process. I have 1/2" thick mother about 14" across. I named fer G&F Gaf short for Glen & Friends. Have her sitting on my kitchen counter... People find it rather weird that I have this gallon jar with a mothers 'Brain' in it lol!

I have a couple of batches that are around 6 weeks old but one isn’t tasting like vinegar and the other has small mold circles on the surface any suggestions? On troubleshooting this thanks 🙏🏼

I had a lot of batches of vinegar made last year. The only one that created several mother like rubbery pancake is the mandarin peel vinegar, is been 8 Months I made it and still producing more mothers. I recently add a tablespoon of sugar to feed it. And I notice another mother on top.

i had a kombucha pellicle with some 'juice' for probably a year, in a ziploc in the fridge.. worked great to jumpstart another jar. the cloudy sediment at the bottom of an ACV bottle (commercial) is also a good starter. *I'm doing a gallon of the pineapple vinegar from your recipes right now (airlock & jar under my desk-lol) it's fizzing a bit; so we'll see. it's still sweet & not boozy smelling so we'll see. I made a peach mead vinegar that ended up being too acidic (2.4 pH). Can I dilute with peach juice to bring the pH up to 4?

I have some really old vinegar ( anyway of sending photo? ) filled with huge globs of mother. It’s decades old. I fed it periodically. I recently bought a delicious vinegar and it has renewed my interest in making my own. I just checked the old vinegar and it has this white-ish slime/ threads that are now in the liquid and hanging with the big disc/globs of mother ....is this stuff still good? Does it go bad ? I haven’t seen this in the past....

What happens if you DON'T refresh the vinegar? I have a few ACV & Kombucha Mothers in my fermentation cabinet. I haven't done anything with them in months how do I know if they are still good I would like to make something with them? *and I don't really have time to start the process all over again

I created vinegar but turned alcohol after a month and I thought it is spoiled and can’t get vinegar out of it again so, this alcohol now was sweet taste though less sugary taste in it even after a month so, I lid tight alcohol... In days later turn little acidic than sugary so I am now adding tea spoon sugar to maintain wine from to maintain it’s alcoholic level... So, now 2 tea sugar in it I stored in a refrigerator...? ?!! .... I don’t know what I am doing...?? I should have let that alcohol turning slowly acidic.... So, acidic means it now turned into vinegar? Can I use that same alcohol lid slightly open to make a vinegar or it will be a spoiled one?

Hi Glen, I have just bottled up 19 litres of homemade ACV that has been 'processing' for the past couple of months. Having watched this video and decided not to keep the mother BUT I notice your ACV is much clearer than mine, which is slightly cloudy although it has been strained through muslin etc. Interestingly, my apple juice is also cloudy this year but not in last years batch which was completely clear, also strained etc. The problem is that I have NO idea what I have done differently this year, can you magically help please?! The apple juice is simply pure unheated, untreated, no additives, only pure juice from my own apples and everything is muslin-strained, but it's cloudy this year... likewise the ACV... I'm very confused! both taste amaaaaaazing, just the clarity is different! thank you...

Hi Glen, Can I ask why you store the mother and don't leave it in the vinegar? I have been leaving mine in the vinegar but from a recent bottle could taste like a slightly stale taste to the vinegar and wonder is this from leaving the mother inside? Thanks

My mother is white, and I just touched it with the spoon and it sank to the bottom of the processing apple scrap vinegar jar. I don't know what to do with that now. Do I leave it? Take it out? My vinegar isn't ready 🙉 she's been sitting for about a month with a coffee filter held on top with an elastic. I'm not sure what to do now with the mother sunk to the bottom, and how do we use the mother later?

Interesting .... I make homemade Kombucha with a mother a friend gave me ... it is easy to give away the Mother, as it multiplies as multiple layers, but it is also great to eat it too. Has the texture of a Gummy Bear. I cut a layer up and put it in the frig with some of the Kombucha juice, which I add some fresh Pom (refrigerated Pomegranate juice from the store). I drink some everyday and eat a few pieces of the mother. I don't know if that is possible with the Vinegar Mother or not however. Have you tried it? AND if there is too many babies that grow on the mother (they peel off like a crepe) and you still need something to do with it beyond what I have mentioned, tossing it into a compost pile makes the soil healthy too. Full of probiotics...

You can make a scoby hotel (same process), the bigger the scoby the faster your kambuja making & there's less chance of it meeting mould spoores because it's faster. So you could make a bucket full fast, more. You can grind the dried vinegar mother up & use it as seasoning as someone else said. I'd recommend home made salt and vinegar crisps/ chips. I'm from the UK. We had salt n' shake (brand name so you can look) with little flavour sachets. Like that.

Once opened, does store bought organic unpasteurized apple cider vinegar have to be kept in the fridge? The label indicates it contains a mother of vinegar. Will refrigeration kill the mother?

I had just started making vinegar about six months ago and it just works every time I've been making it with apples mostly then I just started some with cranberry juice that was store bought so I'm just experimenting more and less but the weird thing is I always see people with their mother vinegar that is kind of a brown color like yours mine is pure white I mean it looks like wax it's so white but of course it's not rigid it's floppy. Do you know what causes this?

The mother will take on the colour of whatever you are converting to vinegar. I’ve made elderberry vinegar; the mother is purple. Strawberry vinegar; the mother is pink.

So for the vinegar to be “alive” should you be able to see something floating in the vinegar? Someone told me it wasn’t live if nothing was in it floating around?

The Aceto-Bacter is microscopic... so there can be millions / billions / trillions of them alive in your vinegar, and you'd never be able to see them. They do tend to clump together and that rubbery mat is just that; part of the living organism. But even after you pull the rubbery mother from the vinegar - there will still be millions / billions / trillions of them alive in your vinegar.

I bought ACV with the Mother. After storing for nearly an year or two(don't remember), it's smell has gone. The floating matter also has disappeared. Can I consume it and does it get EXPIRED

It never actually expires - but flavour and acid content will decrease over time, as will the amount of active organisms in the vinegar. The floating matter that has 'disappeared' has most likely settled on the bottom of the jar.

My home made vinegar gets weaker FAST even if I put a lid on it and it STILL has not formed those thick pancake mats after several weeks. What am I doing wrong?

Did you use enough sugar in your filtered water when you started? The bacteria needs sugar to feed off, or honey, but the honey takes longer and needs more (so I've read).

#EpicFail - it failed miserably, and I realised that the other ferments like vinegar endangered the beer that we brew.

Different ferments should not be so close to each other that there is cross contamination! I keep my Kombucha in my bathroom under sink cabinet, and my vinegars in kitchen pantry. My six week old vinegars have scobys in each bottle.

You need to refresh the vinegar with the mother, because in the absence of alcohol the acetobacter digest acetic acid. :)

@@Bomber411 I just elaborated on his statement that you have to change the vinegar every 2 to 3 months, if you’re storing the mother in a jar with vinegar for later use. The reason you have to put the mother in fresh vinegar every 2 to 3 months is because the bacteria that make the acetic acid (vinegar) from alcohol, end up eating the acetic acid after there is no sugar or alcohol left in the solution. This will make the vinegar less acidic over time, and potentially starve the mother, or make undesirable microorganisms grow in the solution after some time. :)

I just said to someone & then I thought maybe I should comment. You can dry & use the mother as seasoning. You can then mandolin potato, make crisps/ chips , add salt & powdered vinegar mother & it's salt & vinegar crisps.

The Mother eventually starts to eat itself - and starts to change the flavour of the vinegar. Eventually the Mother starts to convert the acid reducing the strength of the vinegar.

Actually this is even easier than then the fruit vinegar, where first an alcoholic beverage is made, then the alcoholic beverage gets a vinegar starter added it With wine vinegar we already have the alcoholic beverage, so start at the point of adding the mother to the pineapple wine. It is the same process. However, very important the wine needs to be diluted with water to get below 8%

Safe to store small Extra Virgin olive and Balsamic bottles in my van that get's to around 90F for a few hours during the summer months? They wont be lasting more than 6 months anyways before replaced.
