I would use board tbh, glass ones are a bit tricky and board gives you more control with the different grit sizes

How long do you take one gundam to finish the straight build? Just wondering with all the setup

I would say 2, 3 days included the time needed for small paint details and topcoats to dry. It also depends on how complex the model kit is, and how much modifications are needed 🤔

How do you tell if a mold Line is not part of the aesthetic of the kit? Also, can you apply polishing compound after painting? Or should it be done before painting?

Usually 9 out 10 times it's a mold line, Bandai usually does panel lines as the aesthetic design. However, if it's tough to tell, or if you are not sure, confirm with the box art or the painted example provided in the instruction manual. If they don't exist, try to reference line art from the anime, or works by others. Lastly, just follow your heart haha, decide if u should remove it or leave it be depending on how u like it! For the polishing compound, you probably want to do it before and after painting for the best result. However it's a bit more tricky after painting, you want to be really careful not to over-sand/smudge ur paints. Wait til ur paints are fully cured, and make sure you apply enough top coats.🙂
