Is it possible to solder the bolo beads to a backplate?

Unfortunately no - because they're lined with silicone, the heat from soldering would ruin that and how they stay in place.

The first example shows a finished piece in which you can pull a single chain to adjust the size of the chain. Could I create this myself with my own length of chain - I'd rather not use the bolo which would use extra chain has has two hanging pieces. If it's possible to create this with unfinished chain, what would I need to purchase to complete this? Thanks!

Ok so how do I measure the chain to pick the right bolo tie/Stopper?

All of our chains have the size listed right on the website in mm.
