to help extend the life of the eggs and not have them stick to the walls of the egg, put the pointed side down. make sure the air bubble is up, it helps with that sticking to the insde of the shell. the only cracked eggs i've ever had were the ones that went sideways, all others pointed down, never an issue.

I like to do two dozen in a jar. It keeps so much of the weight off the eggs. I also wash the eggs before I use them so the lime doesn’t get in the egg after cracking. My eggs have been coming out so perfect you can’t tell the difference between the fresh and water glassed. I love this process.

Crack eggs on a flat surface so you reduce the possibility of breaking the shell and getting shell in you cracked eggs. One firm rap is usually enough and the shell usually sticks to the egg lining and not fall off. I crack and use eggs frequently and almost never end up with shells in my egg or broken yolks. This also helps reduce transferring dirt or bacteria in the egg. I use only one hand, too. Pick up egg, crack on flat counter, shift open egg with the same hand’s thumb. Good cooking! I have some water glasses eggs. I bought them at an egg farm. I got them freshly laid, with the bloom intact, unwashed. Every month I cook some to see how they are. I put these in a bucket of water, with enough to fill it up with the eggs. Then stirred in some Hydrated Lime. THEN I carefully dropped carefully into the water, keeping the water over the eggs. I covered the bucked and put then in a closet. I just now tried one, which I do every month. Today, the whites are a bit thin and the yolk is somewhat flatter than normal. but it tasted good with no funky taste. It was fine. I put six dozen away in March 1st, I ate some evert couple weeks until I felt they would last, I have 4 dozen left. Not bad for unrefrigerated 5 month old eggs!

Of all the videos I've watched, so far yours has been the most helpful. I've had mine for a year and many are runny. I've been throwing them away which was very discouraging for me. Just ate two of them and they tasted really good with salt, pepper and cheese.

Thanks for the quick response! Also, I’ve watched most of the related videos on YT and all mention calcium hydroxide one ounce per weight, but no one mentions how many tablespoons. Looks like you used a little less than 4 level tablespoons. I know it won’t be exact, but is that about right? No scale handy. Thank you!

Is it ok to keep adding eggs every day if using a large container? Also. If an egg cracks in your solution, are all of the eggs ruined? Do I make a fresh solution and transfer eggs to new bucket?

Yes, you can keep adding eggs every day. If an egg cracks (that has happened to me) the other eggs are NOT ruined thankfully 🙂 Make a fresh solution and transfer the good eggs gently one at a time into to the new container of fresh solution.

Thank so much! I made a batch, and two weeks later noticed a yolk escaped an egg! So I must have missed a cracked egg. I was worried I’d lost the whole batch. I must have watched 10 videos, and only a couple commented that you must throw the whole batch out. You are the first to say I can transfer the eggs to a new solution, which to me makes sense. ❤

I got a question for you if the eggs get wet outside or under the sink to say if they were dirty, what is the difference then soaking them in water and lime doesn’t the water wash them in the jar? Can you answer this for me? I have always been puzzled about this. I have water glass, eggs exactly like you said, and never had a problem, but I’ve always wondered this. And if you do not know, see if anybody else does because I am really curious what is the difference between washing them off under just say cold, clean water, then putting them in a jar of distilled water thanks.

I've been collecting fresh eggs from my chickens for two weeks now and have about six dozen I want to water glass. That being said she mentioned that the eggs should be only one or two days old. Does that mean I can't waterglass them now? All I have are unwashed and clean - no poo or straw.

Not ruined. Make a fresh container of lime solution and gently transfer the good eggs over.

If you have water glassed eggs and 2 cracked but they didn’t leak out. I know to throw the cracked eggs out but can you eat the other eggs in the water glassed eggs? Pickling lime is what I use is that ok?

Ma'am I stored three dozen eggs like you said and they turned out the same way when you crack them open if one is cracked in the whole bunch is everything gone or is it can you just take the cracked one out and eat the rest of the eggs

If an egg cracks in the lime water, the remaining uncracked eggs are NOT ruined. Make a FRESH lime solution and gently transfer the uncracked-good eggs into the new solution and continue storing as usual.

Hi. I can't find any info from any sources for these 3 questions. Why can't fresh farm eggs from my refrigerator be used? Also, if the farm fresh refrigerated eggs are brought to room temperature, then can they be used? Hi, I'll do my best to answer your questions... 1. Heating/cooling eggs from one spectrum to the other causes expansion and retraction inside the egg which will either push or pull on the shell and the membrane that lines the interior of the shell. This can cause hairline cracks that are not visible to the human eye. These invisible hairline fractures may not be seen, but are enough to allow bacteria into the egg. So if taken from the cold of a refrigerator to the warmth of the room temp. the egg may be compromised thus possibly allowing the lime solution into the egg which would be dangerous to eat even at minimal amounts. 2. I have not heard it's ok using refrigerated farm eggs once they have been brought to room temp. For me, I would not use a farm egg in waterglassing that has ever been refrigerated based on the answer above. 3. Safe hydrated lime water disposal is a hard one to answer since there is not too much info on it. I reuse my CLEAN hydrated lime water from one batch of waterglassed eggs to another. WikiHow says to flush it down the drain while running the water and keep it flushing for a couple minutes after. This dilutes it enough to not be dangerous (?? Truth? I don't know). I read of a horse owner who uses it on their horse stall floors to disinfect them since the hydrated lime water raises the PH to 12 which is high enough to kill bacteria and disinfect (which is also why they use it in city sewage treatments). Hope some of this is helpful to you!

@@NoPsychoBabble I wanted to add, that I use my old Lyme water on my garden and flower beds and lawn. It's very good for the soil. My mom used to mix it up and add to her garden before planting every spring. So that's what I do with my used water.

This made me chuckle. I have used farm eggs that are a couple months old and they have been great. Shoot, the eggs we get from the store are already sometimes 6-8 weeks old when we get them. I have also used them a month later and they have been fine. If it looks good, and smells good it should be fine.

Yes I believe duck eggs would work just the same! If an egg cracks remove it from the container. Then make a fresh batch of solution and transfer the good eggs over to the new solution. Continue to store as normal.

No not thrown out, but a fresh solution yes if the cracked egg leaked. If the egg leaked, then Create a fresh solution. Next transfer all the good eggs to the new solution. Discard the other.

Pickling lime is the same thing as hydrated lime. Pickling salt is a special salt.

Eggs are porous and its the natural coating called the bloom that covers the egg by the chicken when it is laid. The bloom decreases the porous nature of the egg shell. If you wash it off, the lime solution could enter your egg, as well as any bacteria, etc. ; eggs from the store in the U.S. are washed so the bloom has been removed.

Best to be 100% positively sure rather than iffy. So start your water glassing with 1 to 2 day eggs.

hi! question, a friend is collecting eggs for me to use. is it ok for her to put them on her counter & i can pick them up every 2-3 or 4 days? (then ill bring home & put in my bucket) just didnt know if the eggs should be put in inmediatly or after a few days is ok. thank you

It's ok as long as the eggs are not rinsed or washed. Also, once the egg goes in the fridge, it can't go back to being on the counter.... so just ensure your friend doesn't fridge the eggs, then give to you to set on your counter.

I can't attach a photo to comments, but I've got some pics of 50lb bags in the video at the 11:35 marker. I did not buy my 50lb bag online, but purchased at a local Harware store. I dont have a link to share. Watch this time section in the video: 10:33 through 11:55.👍🙂

If an egg cracks (that has happened to me) the other eggs are NOT ruined thankfully 🙂 Make a fresh solution and transfer the good eggs gently one at a time into to the new container of fresh solution.

When I DID RESEARCH, THIS IS WHATI FOUND.. I would love your opinion: The FDA does not recommend water glassing as a safe method for storing eggs. Calcium Hydroxide (slacked lime) is known to contain botulism in the powdered lime itself. Hydrated lime does not protect against botulism in long-term storage without acid and heat to kill it.

The FDA is not completely Federally funded. Its donated funds come mostly from none other than the Bill and Melinda Gates Foundation. The CDC is also funded by them. Do your research.

Oh!!! So I could not use The egg that a farmer is offering that are 3 weeks old?… it is what it takes for the farmer to complete the special no washed eggs order for a couple of dozens per client. There’s no way I can use them for this purpose?

I water glasses my eggs a week ago and I notice there a tiny bubbles on the top...Is this normal?

I haven't seen bubbles. I would say keep an eye on the color of the water and if there's any odor. Those are the 2 certain things that can be red flags.

Hey thanks for doing this video cuz I'm cracking up in my 5 gallon of stored eggs today now my water has a slight ammonia smell to it I did not have a lime covering and it is a cloudy color throughout similar to the color of the eggs almost which are predominantly Brown I don't have any Easter eggers or anything like that so I have just a variation of beige to brown eggs and I cracked one egg and the joke did fall apart as well I went a little bit farther than you did actually stuck my tongue in it LOL and it has a slight salty taste of course I spit it out really well but no odor so I'm watching your video now while you're scrambling it and I'm nervous I ain't going to lie so I'm going to watch the rest of your video and get back to me I need to I washed my eggs also before I crack them but you know it might just become chicken food let's be honest cuz I I'm not feeling successful at this moment I'm going to go crack a couple more eggs after your video God bless sorry I was so long but you know hey it is what it is 🌻🌻🌻

The cloudy water concerns me. Did any of the eggs have an oder or off color when cracked open? Did you try cooking one up and tasting it?... providing there was no foul or off odor of the eggs...

I did cook them up and then theywere just too watery. some of the yokes were intact ...most were not None of the cholesterols had changed color visually it was fine I guess but just it didn't make me feel like I could put it out of my head to try them I even went as far as mixing them up with the grits from breakfast to go to the chickens and then yanked it away from them because I love them so much I didn't want them to suffer or anything from ignorance ( if I won't eat it they won't eat it ) I sealed the bucket back up put it back into the dark cool closet that I've had it in all winter and have decided that once our back roads are passable again and enough snow and ice is melted I'll just rinse them off then and take them out to the wildlife. We are Dixie fire survivors and have lost I would say 92% of the foredt surrounding us so prior to our first hard freeze my husband and I cleared about 1000 lb of apples from our town and took it up to the mountains to leave for the wildlife and I think that I'm going to do that again as soon as we're able to get out there. there's nothing for them to eat and if they want the eggs they'll eat them. lol God bless you thank you for answering me I'm going to be watching your channel cuz I'm going to need your guidance on trying this again.I think I'm going to do a smaller batch next time. I feel so humbled at the loss.
