Here is how I wax a cheese. Today we are waxing our homemade cheddar cheese at Deep South Texas. I use an electric skillet and a tinfoil pan to melt the cheese wax. Once the cheese is waxed it goes into the cheese cave for 6 months to mature.

Have you ever thought of quartering your wheels and then individually waxing the quarters? As a layman I can see benefits to that, but I'd really like to hear your opinion. Is it necessary to remove the wax after a year? I read your comment that the wax may break down. Is a solution a thicker waxing in the beginning? I am so fascinated by your videos.

Cutting into quarters would not be good for maturing the cheese. I have heard that some do that. I do cut them after they are ready and then vacuum seal them. 🤠

What is best- waxing or vacuum packing? Is the process different for different types of cheese? Also, how do you determine how long you age each type of cheese? Thank you.

I think waxing is better. I do vacuum pack some cheeses because it is more convenient. Waxing is much better for high moisture, semi-hard cheeses. Since I am making mostly common cheeses, time to age is readily available on line. 🤠

How long will that keep after waxed? Years?does it get better with age or worse? Thanks

Cheddar can keep a long time. At least 3 years and likely a lot longer. The older it is the sharper and better it gets. If you plan on keeping it a long time I would remove the wax after one year and vacuum bag it. The wax may not hold up as well as the cheese. 🤠

How much wax is in that pan? I see 1-lb blocks and 5-lb blocks for sale online, and I'm wondering how much I need. What you have there looks like enough for several wheels.

The pan has between 1 and 2 lbs. The wax is reusable. 🤠

I do not remember if I weighed it when it was made, Five months later, in the wax, it weighs 2.8 lbs or 1.27 kg. Usually I get slightly less than a pound of cheese for each gallon of whole milk I use. 🤠

Do you not put yours in vinegar first? How long to dry out per pound?

I dry for two or three days. I do not put them in vinegar. The wax is hot enough to kill any mold that may be present. 🤠

I do both. I think a waxed cheese looks better. Vacuum bags are easier. For Swiss cheese use wax or the holes will not form as well. 🤠

You can, but it will still need to be refrigerated. If it is vacuum packed from the store, that is fine. 🤠

As long as the wax stays intact. It still needs refrigeration either in the cheese fridge or the kitchen fridge once it is mature. 🤠

Depends on the cheese. Any where from 3 months to a year. Some are even better after two years, but who can wait that long. 🤠

I think cheese wax is sold by the pound. One pound will be more than enough for a pound of cheese. 🤠

Lol, it is even better after a year. The trick is to have a bunch of cheeses in the cheese fridge that mature at different times. 🤠

It will last for years. It does need to mature in the cheese fridge. Then move to a regular fridge. I still have one in the cheese fridge that is 3 years old. It is going to be sharp! 🤠

This type of preservation will keep cheese,, no refrigeration for over 10 to 20years. ☺️☺️

It is difficult to keep a hold of the cheese when I am waxing the top and bottom. I have not dropped one yet, but it is worrisome . 🤠

High Larry. I tried it this way and boy what a mess when I dropped it & hot wax splashed everywhere. You weren't kidding, it's a bear to clean up!!! For the benefit of other putzes like me, I used a heat gun to clean it up with scads of paper towels. I suppose a hair dryer would work too on high. The round slipped! I came up with plan B. I used a natural bristle brush and painted the wax on. I think it effective and a very controlled process, but sure not as pretty as the ones you did. Just thought I'd put that out there for others that struggle too. Question: How do you determine when "it's dry enough" to wax? Mine at 3 days was getting pretty crispy on the outside edges. Thanks again for sharing your knowledge and experience. John

Sorry to here about the wax trouble. Brushing it on is also quite common. When a cheese is dry enough to wax is just a judgement call. Two or three days depending on the humidity in your area. Good luck. 🤠

If you wax the cheese wheel do you still have to keep the cheese wheel in humid and chilled 50-60 degree environment?

Once waxed the humidity is not important, but the temperature is. 🤠

No, it needs to be at 50 F or 13 C for 6 months to a year. After that you can put it in the kitchen fridge. 🤠

Ok I MUST give you some information. One RED dye causes CANCER as does yellows it is carcinogenic two, never having done what youve done, is it necessary for the red dye, or is that how that wax comes? IF so, then it would be best to use the mylar bags yes? Also, find you a cheap STAINLESS STEEL pan to do your heating of the wax, as aluminum is ACCUMULATIVE in our bodies, which also makes it conductive, hence, 5G and other cell phone towers, which draws radioactivity to YOU. Stainless steel and also glass. Throw out all aluminum pans!!!!!!!! Wishing you well. tc ttyl Love the vid, but Id have to be forced to pass on eating that beautiful cheese, as its now been tainted with poison with that bath of wax. Bet it would be fantastic otherwise. Looks yummy.

I have not used mylar, but do vacuum seal in food saver bags quite often. 🤠

My Aunt use to use coconut oil to coat her cheese then wrap it with cheese cloth then seal that with more coconut oil. it may be a option????
