Brisket Burnt Ends | How to make burnt ends from beef brisket

To BBQ connoisseurs Brisket Burnt Ends are a delicacy. These delicious morsels of smoked brisket are created by first smoking the point end of a brisket. For this recipe I’m starting with a whole packer brisket. If you can find just the point, it’s perfectly ok to start with it; but I find it hard to source just the point end.
The first step is to separate the whole packer. Remove the thick vein of fat that joins the flat and point; carefully trim between each muscle. Once you have them separated, trim off the excess fat on the outer sides of the point.
The goal here is to expose the meat; you’ll notice that it’s heavily marbled so there’s plenty of fat to keep the point juicy while it cooks. Go ahead and trim the bottom layer of fat to ¼” on the flat while you’re at it. For this recipe you won’t need the flat, so you have the option to cook it alongside the point or save it for later.
I use 3 different seasonings for brisket: The first is a simple salt & pepper layer (my Killer Hogs AP Rub works great here but you can use any All Purpose seasoning); then it gets a layer of The BBQ Rub on all sides followed by light coat of coarse ground Steak Rub just on the top side. This combo creates a savory flavored brisket with really good bark.
Now it’s time to fire up the smoker, I’m using my Ole Hickory Pit for this cook but as always any smoker will do the job. The smoker needs to run at 250⁰ and add a few chunks of Pecan wood for smoke. When the cooker is up to temp, place the point on the rack and let it smoke until it develops a mahogany color on the outside (about 4 hours).
Once the bark has set and the color is right, place the brisket point in an aluminum pan and add beef broth around the point (not over it). Cover the pan with aluminum foil and return it to the smoker.
It will take about 3-4 additional hours to get the point tender. It needs to go to an internal temperature of 205-210⁰. Use an instant read thermometer to check the temp and once it’s there, remove the pan from the smoker and carefully transfer the point to a cutting board.
The drippings or “Brisket Jus” is used to make a sauce for the burnt ends. Pour the jus into a fat separator or jar to remove the fat. It will separate and float to the top. The fat can be ladled off or if you use a separator, simply draw it out the bottom back into the aluminum pan. Mix ½ cup of The BBQ Sauce with the jus and give it a quick stir.
To turn the point into burnt ends, use a sharp knife and cut the point into 1”x 1” cubes. Dredge each burnt end in the sauce mixture and line them bark-side-up in the pan. Drizzle a little more sauce over the top and return to the smoker for a quick glaze (10-15 min).
At this point the burnt ends are done and ready to serve. A perfect burnt end is soft and has a savory, sticky-sweet taste with all the great flavors of a smoked brisket. When you pop one in your mouth it will effortlessly melt into a flavor explosion!
Burnt Ends always disappear fast, so go ahead and enjoy a few before they’re gone!

Yup. He subtly advertises his brand, but doesn't take away the viewers point of view that they probably don't have his seasoning. His character and willingness to teach sells his products. I've bought some of his seasoning and it's great. Such a humble person.

This is correct, and most of the good channels do not annoy you by pushing their wares. If you have something good, it will speak for itself. I haven't tried Malcolm's rubs yet, and they are a little pricey, but I'm sure they are excellent. It's all good, and his instructional videos are point on. I made some pork belly burnt ends following his recipe, every detail for a Christmas Party last year and they were a huge hit.

I've only done one brisket (USDA Prime from Costco about 10#). I did this for a family dinner and used what was done here. My Father-in-law said the burnt ends were amazing, in the 13 years I've known him, I've never heard him say anything close to that about food. Definitely doing this again!

@Donald Maynard 210F. Most will pull a whole brisket around 200-205F, but when the point is separated you can cook it hotter to render the marbling. If you cooked the flat to that temperature it would probably dry up unless you injected it.

It's kind of hard to find details like these without watching 20 minute videos👍...I do enjoy the videos too🤫 I've been taking my whole brisket to 207-209...but they are select or choice from restaurant supply place (cash & carry). I'll check at 204-205 next time & see if the probe feels like butter. Been doing brisket for about 2years now & it's always fun (more when everyone could come over & share) I've never been disappointed in one... although I always want them to be perfect & try to change things I think could be better. Everyone else just says "don't change anything" every time lol🤣😂

I have been eating BBQ for 65 years and my favorite was BBQ ribs, until my son made be a brisket. Yes I'm biased, to my son John. @@muskrat477 Pork Ribs have long been my favorite, however After 8 hours indirect fire more smoke cooking, followed by 3 hours cooking with the meat wrapped in butcher- paper resulting in melt in your mouth BBQ brisket -best I ever had! The purpose for the butcher paper is to prevent drying out the meat. takes about 11 total hours to cook.

Malcom, I have to tell you. I have watched this video at least 10 times. I'm planning on making a full brisket for Superbowl and the Burnt ends will be a highlight. OMG. It's 10:30pm and my gf and I just finished the best BBQ burnt ends of our lives. Used the Killer Hogs BBQ rub, KH BBQ sauce for the final 10 minutes, and a little KH Vinegar Sauce for the finger lickin dippin! We also used a high quality local angus instead of getting the BJs vac packed meat. We are just simply floored how amazing it came out. Thanks Malcom!!!

I just love the guy's delivery and methodology. Clear precise and easy to follow. Plus you can print it out later, cut and paste to word and then you can follow it. I have to adapt Malcom's methods as our briskets are quite small here in comparison in the UK compared to USA ones but it still works with a little bit of adaptation . I’ve always cooked my brisket whole until I found this video...I just used this technique and now I will never go back to cooking it whole...!!! Cut my cook time down like 4 hours and was so much easier carving up...!!! Thank you for the best video on brisket !!!

Outstanding presentation. Concise and to the point. I have often wondered why no one ever divided the briskett? Happy to see it hurts nothing to separate it. Certainly makes it more managable for smaller smokers.
