I was eyeballing these Naniwa Chosera round stones for a while.
With a few 270mm knives, a 400mm Nakiri in the collection and the aspiration to get me a 300mm+ (hopefully 450mm) Sakimaru one day, they seemed so handy.
They come in 320/1000/3000. I bought myself a 1000 and 3000. The 320 was unfortunately sold out. The normal Chosera stones don't even come in 320. It only exists in this round version.
I also got two stone holders for them in which they fit perfectly and are made of a hard type of rubber, so it won't slide on any smooth surface.
These are in fact stones for free hand sharpening longer blades. Not for a rotation machine of any kind. Although I can imagine it would be cool to mount it on a pottery wheel or record player for some spinning action.
They are not only huge and round, they are also 27mm thick! Which is a lot of Chosera stone right there.
These stones are available at:
USA - perfectedgecutlery.com/
(they're not listed on the website, but e-mail them: Tara Ransfer and her team will give you the service you need)
Europe - www.knivesandtools.com/en/pt/...

Truly enlightning ! When sharpening small blades (with curvy edge) I usually end up with moving my stone around when I change side. I realize now sharpening on a round stone is a much more natural process as soon as one deals with curvy edges. Thanks !

Oh yes, they are very nice for sharpening Sujihiki's and longer blades in general. If I can comfortably sharpen my 400mm Nakiri on these stones, you know that you'll have a blast sharpening your Suji's on these huge, round stones!

Super cool man I had no idea those existed, hopefully you'll find the time to do a sharpening video with those soon...maybe with that Dirk Diggler of a Nakiri 😏

I'm on youtube to show my knife collection and talk knives more than anything else. Personally not that interested in making sharpening videos, since there are already so many and I usually don't like to walk on too crowded paths. Perhaps I'll make an exception for these stones with my Dirk Diggler Nakiri one day 😉. But I still have 30 knives to show.

Love them! These would be particularly useful for a few of the enormous vintage chef knives in my collection, but l could totally see myself using them to polish my longer single bevels as well.

Yeah, these are pretty awesome for that. I was not struggling, but never too confident sharpening my longer knives on normal stones. With these stones I have full confidence. Size does matter in this particular case IMHO.

I’m resisting buying as many whetstone as Japanese knives. So far I’ve got six stones and less knives. My next purchase should be a Nakiri, round stones can wait.

@@edwardrutledge2765 --- No worries, mate! After hundreds of hours underground, I have discovered that it's better above ground. I'm not quite at the point of giving whetstones away (well, just one) but I have given away a knife. I'm trying to learn how to cook! There is a limit to how much one can eat, so I feel safe with that hobby. That, and swimming.🙂

I can relate. I have more than enough stones to maintain my knives, but not enough knives to wear off all my stones within my life time.

@@chefknivesenthusiast ---- Ask friends if they'd like their knives sharpened. Just be forewarned, that you'll be repairing knives, before you can even begin to sharpen them. It's amazing what poor condition most people's knives are in (e.g. won't even slice paper). Some will throw knives away when they get so dull they don't cut.
