I've been saying for years that you do the pillagers first before the villagers to eliminate the possibility of any of your pillagers being killed by golems being spawned, but no one listens to me. As a suggestion, you could get the Litematica Printer mod on Modrinth. It will allow you to place the blocks without having to look at each one. That way you can just run along the schematic. Should speed up building a little bit for you. Very enjoyable video and I appreciate that you link where you get the farms from!
