One pretty vanilla horse mod I like is Realistic Horse Genetics mod. Adds a ton of new skins & sizes that horses can be.

I do know about that mod actually but it kinda overhauls horses in Minecraft instead of improving it you know. But still, I agree that it's a really great mod!
