We've had a BUNCH of request to try out this low FODMAP diet here on 'Budget Eats' so today, June's gonna give it a go! While also incorporating a 'no nightshades' rule, June sees what she can do with a $25 budget!
FODMAP stands for Fermentable Oligosaccharides, Disaccharides, Monosaccharides And Polyols. These short-chain carbohydrates can cause digestive distress for some after consuming them. So, if you're one of those people, try out some of these amazing recipes!

The FODMAP diet can be so restrictive. Someone suffering from issues might wonder what in the world can I make with what I can eat. You've shown some inventive dishes. It's so great how you did your research into this diet.

Try being a type 1 diabetic! It really sucks with the no sugar, no carbs diet. It makes it super difficult to eat, especially if you aren't rich. Eating the way I HAVE to, is super DEPRESSING! I hate the fact that grapes, apples and pineapple are foods my endocrinologist request I don't eat. They are my favorite food!

@@deadpetalart That would be a great one to address on a video. Especially for those who don't have the variety of food markets available to them where they live. My sister is on a very restrictive diet and struggles to find variety in foods, It must be extremely difficult for you in a social setting as well.

I honestly did not react well to seeing something related to amaranth that wasn't tested by monash being put into more than one dish in fairly large amounts. Like just an 'oh no' moment.

@@CatStockings yeah, there’s so much in this episode that’s a DO NOT DO for people who really need a lower FODMAP diet. All the soy sauce - no. Just no. The curry powder is a no for the nightshades. The fermented foods. Sigh.

Love this series! But as a studied dietitian I have to point out that (as june mentioned in the beginning) the low-FODMAP diet is a therapeutic elimination diet an should only be done supervised by a trained dietitian or practionioner for different reasons: 1. what foods are high or low FODMAP can depend on which source of information your leaning on, the preparation technique etc.; so to avoid unnecessary restriction seek help from a professional. 2. navigating symptoms especially for people with IBS can often times be unpredictable and frustrating and a professional can guide you through it! 3. the diet is temporary, the endgoal is always to get back to a diet with as few restrictions as possible. Which FODMAPs trigger you and in what amount is highly dependant on the individual. 4. If you experience stool inconsistency or unusual bloating or gas, please speak to your doctor first as there can be other reasons, eg. food intolerances, that need to be treated with a different dietary approach. i would add thats its a good idea to test for celiac before going low fodmap, i know a lot of people that suspected celiac after going low fodmap and havent been able to get a conclusive diagnoses

Definitely a good idea to get guidance from someone who knows what they're doing. Also good advice to check with your doctor about bloating, but also do some of your own homework. I had serious bloating and pain, and my doctor had me get an ultrasound, didn't see anything (although the gas actually obstructed the view a lot) and just gave me prescription strength antacids. I did some online detective work and found out too much sugar in the diet can cause something called candida, where basically sugars are fermenting in your gut. I cut WAY back on sugar and 90 percent of the problem went away. But I also had a weird sharp pain at a point between my ribs near my stomach (which I told my regular doctor) and noticed a bad taste in my mouth every morning. I also woke up a lot at night and drank water because my throat felt sore. When I decided to see a naturopathic doctor she said, "Well, you have a hiatal hernia." Did my homework again and yeah, there was the source of the pain, the sore throat, the weird tastes in my mouth. She wants me to have a CT Scan to make sure, but meanwhile, I've made a number of "lifestyle" changes (including eating small meals and sleeping propped up) and am doing even better. So yes, I agree. Talk to your doctor. Work with a professional if you make big dietary changes. And don't be afraid to do your homework and share what you find with your doctor/nutritionist.

IBS is a diagnosis of elimination as there is no test to diagnose IBS it's basically a diagnosis given when all other conditions that present similar conditions can be ruled out. Also, the causes of IBS are not known so it would be pretty difficult to get medication that would be able to treat everything. There is medication that can treat some of the symptoms but for some people it can be really debilitating and medication may not work at all. The low FODMAP diet is the most researched and effective treatment for IBS out there.

My sister has the same issue, if you use the recipes with soy sauce double check you're getting a gluten free soy sauce. It can make a big difference for some people, it does for my sister's IBS and it doesn't affect the flavor.

Would be very interesting to see a video where you could only shop at a convenience store. Many people live in food deserts and can only shop in dollar or convenience stores which often contain cheap, but poor quality processed foods. I know that there are meal kits that can be ordered, but many people likely cannot afford this service, and or are out of the delivery radius.

I have an allium (garlic, onions, shallots, lilies, etc.) allergy and it was so exciting to watch a Budget Eats that was entire made up of flavor explorations I could eat. While the Low FODMAP diet is a temporary elimination diet, having a lot of these flavor explorations exist and be presented to the world without any of the potential problem ingredients is amazing because it provides a sense of what can be done. I could add in wheat or potatoes and riff off some of these meals without having to try and figure out how to compensate for a heavy reliance on garlic and onion products to make things actually taste good. I am really so happy to see that this video exists.

If you like Indian flavours and vegetarian food, look for "Jain style recipes" or "Bengali niramish recipes" - both avoid onion (& shallots & other onion cousins) and garlic due to religious reasons, so most recipes would be allium-free!

In france, we traditionally use buckwheat flour to make salty thin crepes, then once you cooked all of the crepes, add ham, cheese and an egg on top, fold and fry in a pan :) sooo delish Also, with the Huazontle you can make “tortitas” out of them, a Mexican traditional recipe 🙂 ty for this new episode

@@shitlista4283 1 egg, 250g buckwheat flour, 1 teaspoon of Salt and 700ml of water, 2 tbsp of choice oil. Add flour in a bowl, add the egg, slowly add the water while mixing everything to combine. Let sit the mix during at least 1 hour. Then cook in a hot and oily pan by adding the mix in a thin layer. Let cook 1 to 2 min per side. Clean the pan between each crepes and put a thin layer of oil so it doesn’t burn. If crepes breaks, add 1 egg to your mix, and if you’re allowed to eat gluten, you will have better results by adding 50g of wheat flour 😊

You know, of course, you can use garlic oil. Just let the garlic sit in oil to infuse the oil ... make sure to strain thoroughly, insuring that no garlic solids make it into the oil. I've been doing Low FODMAP on & off for about 10 years and it was such a relief to be able to get some garlic flavor in my food in the elimination phase! I don't seem to be inordinately affected by garlic, onion and tomato (within reason), so I'm lucky even though I have pretty severe IBS, although when I began using the diet, I avoided them. Now I eat them in limited amounts. What REALLY sets me off is carbonated beverages, huge amounts of raw vegetables and, seriously, who knows what? One day a food will be fine, the next, I have a very bad day if I eat it. Thanks for addressing the FODMAP issue.

I have bad seasonal allergies which increases inflammation, and I found out that the swelling is also internal. So when I have bad hay fever, I am likely to have stomach issues.

I agree re infusing oil. Garlic infused oil has made my restrictive diet so much easier as garlic is a trigger for me.

@sherry ann, I feel like you see me. I am the same with the carbonation. High Fructose Corn Syrup and mushrooms are some of my biggest triggers. I hope you've found some relief from your IBS!

Hi June, love you and this series so so much. Your soba situation reminded me of a Handcrafted (Bon Appetit) vid I watched awhile ago while depressed in bed. It was mesmerizing. Soba masters train for years and years to perfect the noodle. He says several times “if it breaks you can’t fix it” which at the time I received as a metaphor for life. Highly recommend watching it.

The buckwheat… wasn’t it expired? I wondered if that’s why it tasted like burnt tire?? Yes, the expiration was back in 2018! 😂 I am always impressed at her bravery. I eat expired food but maybe not years expired. 😂 June is a champ!

I love stir fry pineapple. There's a Khmer dish that consist of pork ribs and pineapple, pork or beef pineapple. That oyster sauce does it! Always enjoy you experimenting with food, June!

My daughter and I was watching your episode with the prawn chips. So we finally got some from Amazon and they were incredible. And who knew MSG was really good. Now we have a permanent salt shaker with half MSG and half Himalayan salt. We are putting that stuff on everything thanks

Loved this episode so much! Didn't expect June to ever make a video following a diet that is so similar to how I eat when my chronic illnesses are flaring. I'd love to see a video on a low-histamine diet! There are so many restrictions being low-histamine, and I often run out of inspiration and ideas on what to cook T-T I would LOVE to see June's creativity beat this kind of challenge!

Thank you for posting this!! My doctor wanted me to try low FODMAP and I find it to be an extra challenge that I'm a vegetarian. I find the lists of what you can eat to be a little confusing, so thank you for giving us more details - AND introducing us to that very interesting amaranth/quinoa green. :)

I did it on my own but would not recommend that to anybody! It’s such hard work honestly, and requires hours of research. So would recommend you get a dietician to help you :)

God, June, how did you get that I needed this? I literally just did the test on food intolerance and have to make major restrictions when it comes to food! This was so helpful! I suffer from gluten and yeast, milk, eggs and ect. intolerance, as well as gastritis for years! This was so refreshing! Love your episodes!

My family grandparents are Swiss and Italian and we use buckwheat all the time! It doesn’t hold well just by itself. They have a version of buckwheat noodles called pizzoccheri (20% wheat flour 80% buckwheat (ish)!!

I love your videos June! They’re so accessible to the average consumer, it’s amazing! If you’re looking for more diets to try on a budget, you could maybe try a low-sodium diet. My dad has a heart condition, and learning how to make meals that he can eat while staying on a budget and not spending all of my free time in the kitchen is a bit tricky. Since I know you absolutely love a challenge, maybe doing something similar on your channel would be fun! 😊 Keep up the great work! You’re so inspiring!

June your buckwheat noodles were not a fail. I actually had 100% buckwheat noodles before from a great brand but they also smelled of burnt tire lol (perfect description) and they disintegrated too. Really need that wheat gluten to keep them together.

I’ve had a lot of buckwheat noodles (the ones I’ve had from Italy are usually pretty great) and only a few of them go weird- they can be tricky though as the cooking instructions are almost always a bit off. The brand I buy can vary in cooking time from 5min to 12 min (box says 8min).

Thank you thank you thank you for taking on Low FODMAP!! I’ve been on it for 9 years now and never thought I’d adapt to this complete overhaul of my diet. It’s not easy to live in a high FODMAP world, but videos like this give great ideas and just helps one feel heard

I’m not a cook but love everything you do June! I would totally try all the amazing things you cook! I learn so much just watching you use foods I’ve never heard of and even parts of various foods that most people throw out. I went 44 years having never heard of asafetida and then just yesterday I learned of it from Tasting History with Max Miller and now today you've used it. I think this is a sign I need to try it. 👍

Be prepared! I just started using it and it smells really strong (put it in a well-sealed container) and you only need a tiny bit in most dishes. I use it to get a little more oniony flavor since I'm not eating onions or garlic.

I loved this episode, I usually love every episode because it teaches everyone to reduce food waste by being creative in the kitchen, but this episode blew my mind. I had no idea what the concept was and thought you were going to struggle a lot more, but every dish was beautiful and vibrant(tasty and flavorful too). I don't know how you manage to make every dish so lovely and I strive to get creative with unconventional and limited ingredients often as well. Thank you for being so fun and inspiring to watch, I adore you, June💛🥺

I’m allergic to soy in all it’s forms as well as corn. Any chance you could do a budget eats with no soy? It’s in all the things, even some things you wouldn’t expect.

Coco aminos is a "soy free soy sauce" so you could also try that as a replacement?

I just got off low-FODMAP for the second time for my IBS and I love to see meals with foods I can actually eat so I can remind myself that I can still have good meals without onion, garlic, gluten, etc. Thank you for trying this out !! Maybe you could try sugar-free meals later :0
