Macros 1 burrito: 489 calories, 22C, 24F, 41P
1 medium tortilla (130 calories)
100g ground turkey
1 yellow onion
1 egg
50g egg whites
15g cheddar
10g soy
5g honey
5g gochujang
1/4 tsp garlic powder
1/4 tsp cumin
salt, black pepper
Dice the onion. Combine soy sauce, gochujang, and honey in a glass and mix.
Fry onions with a pinch of salt for 3 minutes. Then add another touch of oil and add turkey, separating the meat with a spatula. Let it sit there for 1 minute, then add cumin, garlic powder, and black pepper. Mix the meat and let it cook through for 1 more minute.
Now add the sauce, combine everything, and follow up with egg and egg whites. Keep stirring for 45-60 seconds until the eggs are cooked through. Remove the pan from the heat. Add the meat and eggs to a plate and let it cool down so it doesn't steam anymore.
Add it into a tortilla with the cheese and roll it into a burrito shape. Put it back in the pan with a bit of oil and toast all 4 sides until brown and then add it to a paper towel und roll it up. To store them, add the burritos into a zip log back and in the freezer for up to 3 months.
When you want to eat one, just microwave for 2-3 minutes, done!
