Fun fact - jalapeños used to be spicier, curvier, and more commonly red until salsa became universally popular. They had to figure out a way to predict the heat level for manufactured, labeled salsa (mild, hot, etc.), so they started using a milder green pepper because its heat was more predictable. Because so much of those peppers were being grown for manufacturing, they stopped really growing the other kind. Anyway, you used to be able to find red ones but can't anymore! The Chili's logo, if you can believe it, is a jalapeño.

PYREX (with a capital E) is usually borosilicate glass which is much less susceptible to thermal shock than other types of glass. Pyrex (with a lowercase e) is usually soda-lime glass which is not safe for temperature differentials, but IS safer if dropped/shattered. You can also look at the color of the glass, borosilicate will be almost colorless against a white background, soda-lime will have a blue/green tint.

silly tip for next time! i don’t remember the name for this technique but it has something to with incorporation and emulsion of 2 things with different textures… basically instead of pouring the blue color directly on the entirety of the jello, take a small portion of the jello and add the color to it once it’s perfectly mixed you can add this mixture back to the original jello! this method of mixing in things in general insures incorporation and no clumping

Happy Birthday Kermit! I had a Miniature Italian Greyhound (Ringo) that lived to be 19 years old and passed away in 2018. Back then the record age for an Iggy was something like 23 years old, and it looked like he may get there. But, just like many humans of advanced age, everything hit him all at once and he faded fast and died on November 22, 2018, Thanksgiving Day and my late wife's Birthday, who died 2 months earlier. I remember when my wife Joanie, Ringo and Ringo's Dad (Romeo), Mom (Juliet) and sister (Lulu) used to gather round my PC and watch you and Jenna and your dogs videos. It really was a happy time, and I may not have ever thanked Jenna and yourself for those memories, but I am now. Thank you Julien, and please thank Jenna and the dogs also. At least I stll have Ringo fairly close to me, as he is buried in the backyard. I apologize for being such a downer during your upbeat video, but when you picked up the dogs, the memories just came rushing back and now that I am always alone, I don't really have anyone to share those memories with any more and that realization blindsided me out of nowhere. Thanks for all the memories over all those years. Take good care of your family.

Red jalapenos are simply more ripened regular jalapenos. Most stores don't stock them because the shelf life is shorter.

A lot of “different” peppers are just one Kind but at different stages. Red jalapeños may go under another name

Hi Julien, about the Pyrex measuring cup - I won’t get into the long winded history or if but long story short there are essentially two different brands of Pyrex, the one you have is the cheaper version that is currently made by Pyrex made out of soda-lime glass which isn’t as resistant to heat. If you want to get the better brand of Pyrex look for the ones with the uppercase letters on the glass instead of lowercase one like you have. They aren’t sold in America but you could either find them second hand, or I believe they’re still sold overseas in Europe, so if you’re interested you could go that route too. Hope this helps:)

For me, Jarlic is for super combined dishes but if I’m making like a pasta sauce or a sautée that’s mostly oil based then I’ll use real garlic because you taste it more I think
