cooking tip, julien! if you turn on your stove and you put your hand over it and it feels hot, that means it's working 💛

If you wanted it spicy, 1. The recipe should have mentioned that a habanero pepper is a good substitute for scotch bonnet. 2. Do not remove the veins from the Serrano peppers and possibly add more Serrano peppers than the recipe calls for. Yes, remove seeds (I hate the texture of the seeds in my food) but don't remove the white veins that hold the seeds because that is where the heat is.

Green bell peppers are more utilitarian. They are in the base of so many recipes and I use them often. With that said, a red bell pepper is special. It has this bright sweet taste that can transform a dish but.. I don't want its dominating flavor with all cuisines.

I worked in grocery stores for a long time and removing the leaves of the pinaple is super common, I suggested it several times to the customers, it just makes the pinapple easier to pack and the leaves don't poke you as you cary your bags.

If you wanted spicy, the scotch bonnet pepper would have kicked your butt. So good to see Julien back ❤!! Next time try a grocery store with West Indian produce/ products and you would have found the scotch bonnet pepper.

also with curry if you cook the dry spices in a pan medium high heat , constantly watching it for about 5 mins. then flash freeze in fridge to cool. then run that spices through a coffee grinder. this creates that spice you love so much 😋
