Welcome back to Taco Tuesday Episode 10 - FULL RECIPE BELOW!
Corn smut, Mexican truffle, Huitlacoche, or alien looking stuff on my corn. Whatever you call it, Huitlacoche is a plant disease that causes smut on corn. It generally occurs after a rainstorm when the corn is ripening. In the US, it can be pretty rare to find due to the spraying of fungicide, however, in Mexico, it is seen as a delicacy that can be served in all sorts of savory dishes.

-- Huitlacoche or Corn Smut Tacos --
- 2-3 cups of huitlacoche (corn smut), roughly chopped and rinsed
- ½ onion, sliced
- 1 roasted poblano, sliced
- 2 cloves of garlic, roughly diced
- 2 TSP olive oil
½ TSP ghost pepper powder
Salt & Pepper to taste (1 TSP)
1. Clean the huitlacoche and cut all the vegetables.
2. Add olive oil to a cast iron over medium heat.
3. Add the onions and garlic and saute for 3-4 minutes
4. Add the huitlacoche and saute for 1-2 minutes.
5. Add the poblano and cook for another 30 seconds until warmed through.
6. Remove from the heat and serve with steamed tortillas.
7. Add toppings such as pickled onions (My favorite), cilantro, tomato, avocado, or cheese. Enjoy.

Nice video! But just so you know, fungicides actually don't work for corn smut. The biggest reasons you don't see corn smut in the US are because we use mostly resistant varieties of corn and utilize crop rotation.

Hello, thank you for letting people know about one of the most loved delicacies in Mexico. But you you are missing one ingredient that is essential for huitlacoche, epazote which is an aromatic herb used is most Mexican dishes and huitlacoche tastes better with serrano peppers or jalapeno pepper

Yeah, canned Huitlacoches are good if that's all you have but fresh is better to cook up, never tried huitlacoches this way in taco form, my mom would serve us some fried rice with an equal amount of huitlacoches, some guacamole as a side dish and maybe some totopos(corn chips). But never tried it with poblano pepper slices and sliced onion, mom would cook it with a small/medium tomatoe and small/medium onion chop both up and if you have epazote(wild herb that is now cultivated for sale), the epazote gives it a certain, distinct flavor, some people say it tastes like kerosene, lol but its added as a digestive aid, so the eater won't feel bloated.Thumbs up Ethan, thanks for sharing and greetings from Mexico! :)

Harvested my first bit the other day. Was not disappointed. Unfortunately really hard to find in the north east US, even in gardens. 7 hours managed a 9.4oz yield, but it made for a delicious quesadilla

Once you have it , I believe you can use the infected corn to infect more uninfected corn. Not sure exactly how to use the spores but I'm sure you can find some info online. Im planing on trying it myself at some point.

Just found this on one ear of Golden Bantam sweet corn. I’ve heard about huitlacoche but didn’t know how it is prepared. I’m going to try it.

A friend of ours got some corn from a community garden with corn smut and gave us a couple of ears to try out! Haha, I've had several episodes of practice now :)

I planted corn this year, and it has this growing on it. Never seen anything like it before. I was very surprised to find out that people actually eat this stuff. It looks so gross.

That is pretty interesting, E. For some reason I always thought blue corn was made with huitlacoche, but that information may be from 40 years ago. You are kinda like the Adam Ragusea of tacos (and that is a compliment). Not only will I try it, but I will try to seek it out. Thanks for telling me something I did not know!

I'm actually not sure what strain of corn they use for blue corn! I learned a lot about huitlacoche making this one, I never realized how interesting it is. Glad you enjoyed!

No it doesn't show up in your poop. The fungus breaks down that hard outer shell.

I like my corn yellow and fungus free. Wouldn't try it. Also dont like mushrooms. Another fungus.
