Corn smut, Mexican truffle, Huitlacoche, or alien looking stuff on my corn. Whatever you call it, Huitlacoche is a plant disease that causes smut on corn. It generally occurs after a rainstorm when the corn is ripening. In the US, it can be pretty rare to find due to the spraying of fungicide, however, in Mexico, it is seen as a delicacy that can be served in all sorts of savory dishes.

-- Huitlacoche or Corn Smut Tacos --
- 2-3 cups of huitlacoche (corn smut), roughly chopped and rinsed
- ½ onion, sliced
- 1 roasted poblano, sliced
- 2 cloves of garlic, roughly diced
- 2 TSP olive oil
½ TSP ghost pepper powder
Salt & Pepper to taste (1 TSP)
1. Clean the huitlacoche and cut all the vegetables.
2. Add olive oil to a cast iron over medium heat.
3. Add the onions and garlic and saute for 3-4 minutes
4. Add the huitlacoche and saute for 1-2 minutes.
5. Add the poblano and cook for another 30 seconds until warmed through.
6. Remove from the heat and serve with steamed tortillas.
7. Add toppings such as pickled onions (My favorite), cilantro, tomato, avocado, or cheese. Enjoy.
