Here's one that people have been recommending that I try for quite a while now.
I managed to get hold of a can of this stuff (which is maize kernels that have been infected with a fungus called Corn Smut) - this cost £6.50 from Sous Chef. Will it be worth it?

Have you ever tried opening a can with a ring pull abd the juices just fly everywhere? I wouldn’t want fungus corn all over me and my kitchen. I would open with a can opener too lol.

@@AtomicShrimp You should put a little 5 or 6 second visual graphic. One of an open pulltab with the item inside destroyed. One of a pulltab can opened with a can opener with a perfect item. That would shut people up

Hey Neehaw, use ya brains. Can opener leaves no annoying ridge. Tab there as a courtesy but not the best option.

Interesting fact about cuitlacoche: while normal mais misses some essential amino acids meaning you cant live of only it, the fungus on cuitlacoche actually makes it so the mais contains every essential amino acid. Therefore, this could be your sole source of protein, unlike mais. Source: im a bioscience engineering student who watches a lot of food documentaries

As I recall from traveling in Central America, their way of making corn tortillas increase the nutritional value of corn as well. Don't recall if it was by increasing availability of an amino acid, or an essential vitamin. They cook the dried kernels in water with what they call cal (slaked lime, if I'm not mistaken). They then rinse them, remove the outer skin of the kernels and mill them to a smooth paste. That's the dough for tortillas and is used in different countries, in different dishes, based on available ingredients. Sopitas, gringas, pupusas, tamales, chuchitos, and a bunch of other tasty stuff. Edit: They basically make hominy, which has a greater availability of B vitamins than corn.

given how "la costeña" is one of the biggest canned corn producer in mexico, and that i've seen it prepacked in Walmart, i think its not that weird

It's called Mexican truffle and is secretly used in high end restaurants as an ingredient to enhance the flavor usually as an extract or paste, it has a pretty high umami rating. It's also a probiotic. Never seen it canned which is a plus on weirdness scale for me.

As a Mexican I can tell you that huitlacoche on season is fairly cheap and you can eat it as a side dish or as a main course usually is cooked with fresh corn garlic onion and green Chile and served on a tortilla with a soft cheese such as fresh mozzarella we use a variety called Oaxaca that it's saltier than mozzarella. It is delicious and savory

Yes, it is a gruesome thought and sadly their are horrific fungi that infect and kill small creatures like caterpillars and ants. A cordyceps variety actually infects the brain of ants and eventually bursts through their head. I really hope they don't feel pain but I rather suspect they do.

@@DthennI am sorry, I will try to be less funny and more infornative, is mostly a social media thing, a mock discussion between people of diferent regions of Mexico about the proper way to prepare a quesadilla, especifically the amount of cheese (queso) that you have yo add so you can call it a quesadilla; it is of course intermingled with regional rivaleries, some of them very old, and all of them rather odd. In sum, the provincial and close minded people of the southern and northern regions insist that a quesadilla must have a lot of cheese and the overly sofisticated and ridiculous people of the central regions, specially the capital city (so much people and pollution made them all crazy) that it can have none at all, and that any dish folded as a quesadilla can be called a quesadilla, the over the top virulence of the debate make it funny.

It was me who suggested this. Thank you Mr Shrimp for giving it a go. Mixed feelings now. I thought this would be something that would both look and smell really bad. 1 out of 2 is still something I wouldnt want to pop in my mouth. You have probably done more for sales on this can of smut than any TV advert could ever do. I did like how you used a lot of the content from 'steve dont eat it'. Would like to see 'ralphs potted meat food product' some 'Natto' and maybe some 'Bun dae ki'. Again, total respect to you for trying a can of mould. Interesting thing though is I think you will be buying more as you generally seem to like this over a lot of stuff you have tried

Love the stuff, heck I have some right here in it's little styrofoam container in the freezer with it's own little pocket of mustard and sauce :p Unfreeze, mix the whole lot till satisfyingly strigny and goowey... chopstick-in them little beans till there are no more. Ok now gotta unfreeze some of that nutty-chocolatyish-cheezy goodness right now.

In future when making quesadillas, I'd recommend folding the tortillas and filling them in between the folds, should make it a bit easier to keep all the ingredients inside during consumption!

Mexican here, that's a pretty good quesadilla, here huitlacoche it's so common that people sometimes just feed it to cows alongside regular corn. It is an amazing ingredient tought, specially fresh. Do you have a P. O. BOX? , I would love to send you some more Mexican (normal here) weird things in a can! That stuff is sold super cheap here.

I’m always amazed when I see something so ugly, that someone would say, “I’m going to eat that!” Like raw oysters, snails or cactus. However, I’m very thankful for these food explorers as they have given the world many delicious things. Thank you for carrying on that brave tradition!

The thing is , infected corn sounds kinda gross , but if you think about it , it's a fungus , which still sounds gross , but we actually eat fungi on a daily basis , mold on cheese is a fungus , all mushrooms are a fungus. So it should not have tasted bad from the start ! It does actually look like mushrooms and shrimp did say that it tasted like them a little too. Just food for thought.

I have to try the corn smut. I’ve always wanted to. Typically here in California quesadillas are made with biggish flour tortillas, and folded over , which makes eating them a lot easier.

I live an hour and a half from the border with mexico, in southern california. Generally considered some of the best mexican food outside of mexico itself. And I can say without a doubt, that quesadilla looks absolutely delicious.

Guacamole _and_ salsa? Guacamole _is_ a salsa (salsa just means "sauce" or "dip" in Spanish). I know in the USA it's sometimes used on its own to mean _any_ kind of Mexican-ish dip, but that's a bit like asking for "meat" or "juice". You can get completely different things if you don't specify _which_ one you want (ex., salsa verde, salsa taquera, etc.). And Cuban salsas are different, BTW (for starters they're generally called "mojo", not "salsa").

i sometimes see those on small nearby fields. and after learning that they are edible in early stages (before then insides start turning back and start bursting into a mess of spores), naturally i had to try. low and behold, they taste like baby corn and mild mushrooms in one, and really quite nice. great in a simple, buttery omlette. PS: they remind me of giant puffballs, which a love

New Mexican here, gotta say, that quesadilla isn't bad! Typically in restaurants here it's flour tortillas and just cheese and sometimes meat. I always use the small corn variety that are common here, but by golly, I have never seen any as large as the ones in this video! If I were you I'd have taken the time to slowly toast the tortillas while the cheese was in there to make it extra melty but your style works just as good :D

I really admire your commitment to approaching exotic foods with an open mind. I used to be a bit of a picky eater, until I attended culinary school, and then had the opportunity to travel Asia with a group of friends. I vowed to never turn my nose up at a food, and it's served me well in my life ever since. I had the most delicious glass of fresh soy milk at a street pho vendor in Vietnam, sitting at a tiny table in a child's plastic chair, just because I had the curiosity to inquire.

I quite like huitlacoche. Great as a taco filling. Tastes like mushrooms to me... Easy to find in the Midwest US but only in Mexican stores or large groceries with specialty sections.

“La Costena” is the same brand as some canned Whole Black Beans , Refried Pinto Beans and Chipotle Sauce that we can buy at supermarkets here in Australia. I’ve tried the refried black beans in a recipe, and they were fine.

This vid would have interested my Dad. Many years ago he was a technical illustrator for a UK research facility that studied pests and diseases in plants, flowers, fruit and vegetables. He worked with Chesswood Mushrooms illustrating diseases in fungi for much of their original research and thesis work when the company first started. I’ve still got some copies of some of his illustrations from the 1970’s.

Huitlacoche does not come from that horrible tasting yellow sweet corn, it comes from the white neutral flavored corn that we use to make tortillas. As you say, is flavorful despite the appearance and when it's fresh is awesome Fun fact: we often call that kind of 2 tortilla quesadilla a "gringa" because that's how gringos cook them, we do them by adding cheese and then folding it like what gringos call a "soft taco", the idea is that you should put enough cheese to seal the thing or at least ensnare the ingredients so it doesnt become a mess when you bite it; this is easy with cheese from Oaxaca, which is kind of made of cheese fibers... despite of what oaxaquenians, their cheese say it's just a variation of mozzarella, so, you can use fresh mozzarella as substitute

You just solved a childhood mystery I've wondered about for nearly 20 years. My great uncle passed away and when we went to clear out his belongings, he had about 10 cans of this stuff in his pantry that was then transferred to ours. The thing was, none of us spoke or read Spanish, so no one knew these cans had in them. Still, we were unwilling to throw away good food, so these ridiculous cans just sat in our pantry for a decade until they finally went into the trash bin. Finally the mystery is solved. Thank you.

I found a huitlacoche flavored sugar drink in a Mexican grocery store once. It was pretty odd, it had a earthy flavor, but mainly tasted of violet, I think. At least, that's what I assume violets taste like, my only experience with them is the purple violet flavored Chiclets.

This review has made me extremely happy! I'm glad you've liked it. Huitlacoche with Oaxaca cheese (queso de hebra/Oaxaca-stringy cheese) is phenomenal. Perhaps you could challenge yourself by making tortillas by hand. You can make quesadillas as basic as you wish, and you've done a fine job in your video!

Just to clarify: we do in the UK have quite a wide selection of wheat tortillas (in everyday language these are typically just called 'eraps'). It's the maize flour tortillas that are rare

Quesadillas are as America as curry is British. It's so bizarre to me that it's hard to find tortillas for you. They're sold in every grocery store in the US, like 50 different brands. And huitlacoche is sold in most groceries near me, just in the "Spanish" isle. Some times of the year, you can get it fresh too, just whole ears with most of the corn infected. I love it. Also, you should have put the "innards" on half the tortilla, and folded it. Thats how you're supposed to make them so there's no mess. I'm glad you like the huitlacoche. I told you it was good.

My grandma loves this thing, she both buys it fresh and often has a huitlacoche and cheese quesadilla from the street market (tianguis) every week for breakfast. Huitlacoche is somewhat common in central Mexico but I've never seen them in a can. Another mexican canned food that you may want to try is "chongos zamoranos", they're basically sweetened milk curds.

Its just like cooked grape texture that isn't bad, that plus pineapple texture and then add them together and add a mushroom corn flavor. That literally wouldn't be a problem unless you're disgusted by literally nothing.

The way I make quesadillas is like this: - Slice some peppers (I like snack peppers mostly) along with onions (can use garlic as well). - Slice/dice some chicken breast into very small pieces. I then fry the greens - Starting with the peppers, since I don't like them crunchy then I'll add the onions after 7-10 minutes (My stove is shitty, I use a lot of greens and usually use semi-low heat - Your gas stove should be a lot quicker ^.^). I season them pretty lightly with both pepper and salt. Then I add the chicken and while they're cooking I'll season them lightly as well - If you want to use garlic, I'd add that close to the end of this process. - After that I simply grab a packet of Fajita seasoning mix and add a tiny bit of water and we're nearly good to go :D A tortilla on the pan, flip it a few times while waiting for air pockets to form - Take it away and prepare a new one - Once the first air pocket shows, I'll add the meat and veggies and sprinkle cheese on top before closing it with another tortilla. Another way of doing it, which I kinda prefer, is to only use one tortilla and only fill half of it then flipping the other part on top (to make sort of a crescent or whatever you'd call it). Condiments, or further filling could be: Add something like sour cream, guacamole or perhaps some salsa before adding the meat/veggie mix and cheese. I usually do sour cream and top everything off with some homemade chili sauce ❤ E) And after watching further, after the _''If you want to tell me I'm not doing something right''_ part I can definitely say: Less is more, when filling your quesadillas :)

Hi Mike, not a bad first attempt at making quesadillas! Mexican food is my specialty - when I make quesadillas I tend to press them down at the edges to make a kind of calzone, doing this provides a crust where you can hold and eat without as much mess, the compromise is slightly less filling though. Might try and find some of this to try!

@@annebeck58 I did live for 5 months in Lubbock, there was a Mexican food truck, for lunch, their thinny beef cube burritos were amaaazing with little cups of salsa verde, spicy food love really began at that moment for me... first one cup for three burritos, then one cup per burrito, then, one day, one cup per bite O.O Mexican breakfasts, super mega burritos grande... I honestly can't recall much eating anything else that was as significant for me. Note I've never been in Mexico. I was expecting superior BBQ in TX but was disapointed, maybe I didn't go to a proper place. Maybe another time ;)

Two things... Yes, that's quite normal here in the southwest US (I've had it quite a few times growing up in Southern California)...and with quesadillas, you typically will put your cheese and filling on one half of the tortilla and fold it over...much like an omelette.

You keep wowing me with these foods in a can videos. I was jealous that we don’t have hotdogs in jars or cans and now with this item that only one H-E-B grocery store sells. I live in San Antonio were you can’t throw a stick without hitting a Mexican restaurant. Also very expensive to buy online. ⭐️⭐️⭐️⭐️⭐️
