It all depends on the context. If you’re making content for children who won’t watch more than 15 seconds of anything, long form is gong out of style. For anyone over the age of 6 it doesn’t matter how long the video is as long as it’s worth watching.

Yeah this is me too man. I don't understand it. Your vids have been so high quality and well produced. I feel like the same thing is happening to a lot of creators. For example Andrew Huang has been posting some of the best videos he's ever made and he's getting like half the views he was before. I think this might be youtubes strategy to sell more advertising opportunities to creators. Very scummy.

To me, my favorite hot meatloaf is a teriyaki/cheddar meatloaf. But I think meatloaf's highest calling is a basic cold meatloaf sandwich. No teriyaki or cheese and a minimal glaze. Just mayo, salt, and pepper.

i loooove my moms meatloaf. after she passed away it took me 2 years to perfect her recipe. it’s an A1 sauce meatloaf with bacon and it’s y favorite meal with mashed potatoes and green beans🖤

I absolutely adore my mother's meatloaf. I'm gonna make her spill the tea on it. It's like a tomato base one with cheese, spinach, and mushroom. Oh and bacon on top

I think Kenji actually answers ur two big questions in his recorded video. 1. He said he almost never makes it with the full recipe, but that it's there as sort of a maximal version to demonstrate how different ingredients affect the dish and can be incorporated. In the video itself he does way less work! 2. He also explains that the reason he sautees the onions isnt to remove the water, but instead to cook them so they arent still crunchy. The meat mixture never actually reaches a hot enough temp to soften the onions, so if you dont precook them, theyll still be hard. Im assuming the mushrooms at that size do not have the same problem! Meatloaf is so incredibly fire, esp kenji's recipe with mashed potatoes. That and some roasted asparagus is one of the best meals ive made in the last year 😭

Right, I remember he said onions start to break down at around ~180 degrees I think, but you shouldn't cook a meatloaf anywhere near that high.

I love meatloaf, but more as a, 'oh, I haven't had that in a long time' kinda way. It's not likely anyone's go-to when there's so many other delicious things in the world, especially since we literally have the entire world's cuisine and how to make it right at our fingertips. I was a little worried about your views dipping when you took an extended break. The younger (than me lol) generations seem to enjoy quick videos now. I'm not that big of a fan, tbh. They're ok I guess. As long as KZfaq is a thing, I'll be watching. Good Luck David. I LOVE your channel

I am a meatloaf fan. BUT, it needs a carb - mashed potatoes. And maybe a good gravy. It's not amazing on it's own, but can be a component of a great plate.

I would never order meatloaf at a restaurant but meatloaf at home with mashed potatoes and all the sides is outstanding. I've made so many different kinds - bacon wrapped, finely ground mushrooms in with the meat, Cajun style with andouille, etc. I like to make it in Summer and have a salad with it. Hubby takes the leftovers as sandwiches and he's a happy man.

Maybe you can try and edit some of the footage you already fillmed into short form videos? Like keeping posting long videos like usual, but also shorts of the same recipes for those who prefer shorts, it may help attract new audience. It wouldn’t require any additional filming, just condensed and maybe a new 1-minute voice over

Yes, there are times when i prefer meatloaf over nearly anything else. The equivalent work that goes into a burger or taco is for a single meal, while meatloaf will last a week. What’s more, it’s easy to toss it on a bun with some pickled onions and raspberry chipotle mayo and I’ve got a burger. But i don’t go to all this effort, some Kraft parma reg cheese for umami, chopped carrot and onion, some panic crumbs and in the oven it goes. You can even buy the half beef, half pork on a single package.

I like meatloaf for a few reasons: 1) it’s cheap, 2) it’s easy to make, 3) you can spice it up with the glaze or by mixing some spices with the meat, and 4) you can add lots of veggies to the mix, making it a healthier meal and also bulking it up, which makes it even cheaper. It’s not a restaurant dish. It’s a middle and low income homecook meal. I know you don’t like the dish, but could you do a part two, with Adam Ragusea, Chef John’s and Babish or Joshua Weissman, please? And I don’t think KZfaq will die out, just like radio, TV, cinema, and even newspapers haven’t died either. There are still millions of people like me who like long-content videos, because of their depths and production values. Hang in there!! Everything is cyclical in this world. And plenty of us like watching you every Friday.

I never ever ever watch shorts. As far as i'm concerned they're absolute trash (mainly because of the algorithm). It's not how I consume content. The day people stop doing long form content is the day I stop watching them unfortunately

I think the video you got the kenji recipie from talks about how a lot of the time he does a relatively simplified version with whatever he has around. I've made that one and imo it's almost as good for way less work. Always love seeing these comparisons, and commenting for the algorithm!

I love meat loaf and have ordered it at restaurants. These recipes are far from tradition home made stuff. My favorite is also the simplest. Two pounds ground beef (any type you want), One bag of Stove Top Stuffing mix, two eggs. Put dressing mix in processor and break down the croutons. Mix everything together and bake. Tomato/brown sugar/BBQ sauce topping optional. That's it, this tastes just like mom's meat loaf to me.

My favorite meatloaf is from a church cookbook. My mom makes it in a stoneware loaf pan and it's the absolute best. Just beef, onions, oats, some spices, ketchup, mustard, and brownsugar. We have it with baked potatoes and green beans. It's such a delicious comfort meal.

I watch your videos for at least 7 years or so and I'm still excited when I see you've posted. I love the format of your videos, they are perfect for me to eat breakfast (I've just eaten tbh). Not to long, not to short. You're a very comforting person and always speaking what's on your mind. It's frustrating af what's happening with yt nowadays :(( No matter what you decide, I will still watch till the time you decide to stop posting (though I really hope it won't be in a near future). My favorite meatloaf recipe is Leslie Bruni's. She's NYT editor Frank Bruni's mother, and he included her recipe in his meatloaf cookbook. It's the very best meatloaf I've ever eaten. It uses a panade (bread soaked in milk, then squeezed) instead of breadcrumbs, which gives it the texture of meatballs that are made with this technique. Also, she cooks, then cools, the onions before adding them to the meat mixture.

I never understood why I only liked my mom's meatloaf and no other until I got the recipe that used rolled oats. There needs to be a binder that isn't dry (as in the bread binder in every one of these recipes). Using oats as a binder not only binds the loaf together better but it also retains more bounciness and moisture as opposed to bread that just sucks the thing dry. My family is eastern European so one of my lifelong favorite dishes is cabbage rolls. One of the many things that makes cabbage rolls so delicious is that rice is used as the binder for the meat filling. Using something like rice or oats is COMPLETELY different than using bread crumbs of any sort. I was actually kind of disappointed in this video (no fault to you, and you don't see me making any videos lol). These recipes are all generally the same with slight variations and the slight variations don't make a difference in the meatloaf itself, they're mainly basting differences. My mom didn't even baste the meatloaf or put any kind of topping on it while it was cooking. The meatloaf is the star of the meatloaf show and you should be able to put any sauce or topping on it as long as it's a great meatloaf. The variation in the three loafs of meat here are VERY minimal. My mom kept the meatloaf without any topping because we would all like it in different ways and at least speaking for myself I'd like it in different ways at different times. I could dip it in ketchup or fry up mushrooms and brown gravy and pour it on top. The meatloaf itself was the delicious part and the sauce or additions just added to or changed how good it was. I would've loved to see the loaf of meat variety change as opposed to the baste/sauce change.

My husband makes a delicious meatloaf and it’s super simple. He doesn’t even shape it in a loaf pan, just plops the meat on a baking sheet and molds it into a rectangle. His secret ingredients are garlic bread and raisins.

So I am also not a huge fan of meatloaf.. until I basically messed around and created my own lol I will say, my fave trick with my meatloaf is sautéing my onion in butter first, until translucent. Letting those cool and crushing an entire sleeve of saltines, soaking them in milk for 5 or 10 mins, adding the cooled onions, and all my seasonings into that mix, then adding it to the meat. Mixing until just combined and baking on a sheet tray. Adding a 50/50 mix of ketchup and brown sugar with a dash of Worcestershire for the last 15 mins. It's so tender and flavorful!

There is a little restaurant in Narragansett, RI that makes individual meat loaves. They roll it with spinach, baby shrimp, fresh mozzarella, and seasonings. Quite good.

In Texas, we just never eat a slice of meatloaf, BEFORE frying a COLD slice in bacon fat. I used to smoke the meatloaf, using Alton's smoked recipe, but, too old now to do that now I'm 74. It really takes it up a level.

Meatloaf to me, is a comfort food. When it's winter, cold and windy, it's perfect. My mom's recipe served with mashed potatoes always makes me feel warmer. Do I want to eat it all the time? Improvements to the Alton Brown meatloaf recipe: leave out the croutons, halve the cumin, use raspberry, blackberry jam or cranberry sauce in place of the honey. I’ve been making it this way for years and it’s AMAZE

Meatloaf is simple. Two of these were over complicated. Some aromatics, some ground meat, a panade to bind everything together and a sauce or glaze to go on top. But the key to the whole thing is to not underseason the recipe. Use 1/2 teaspoon per pound of table salt or 3/4 teaspoon per pound for kosher salt. 2 lbs beef, half an onion, a carrot, 1 egg, plain bread crumbs, 1/4 cup of milk, salt and pepper. Glaze is ketchup, brown sugar and Worcestershire sauce. Standard diner recipe.

I love my mom's meatloaf and I think simpler is better when it comes to meatloaf recipes. Hers is just ground beef, onions, torn white bread. Cook in the oven and glaze with ketchup. Serve with mashed potatoes. I could eat a whole pan by myself.

I agree, I never liked regular ol' mom's meatloaf growing up. However, I always thought it made a decent sandwich sliced thin the next day with mustard and onion. Now I love meatloaf when I make it with hatch chilis and smoke it instead of bake it. The sandwiches are unreal and I usually make it just for that. Definitely worth giving it a try if you have access to a smoker. Maybe something new to try on the long form food format.

I wish I could get you to try my meatloaf. Growing up, I hated the stuff. Dry meat with a ketchup sauce over top. Yuck. Then I got married and my husband introduced me to meatloaf his way: ground beef with chopped onions and parsley, onion soup mix, eggs, breadcrumbs, pepper, and a little beef stock. At the end of cooking, the pan drippings become a delicious brown gravy, with beef stock, some garlic powder, a few dashes of Worcestershire, s&p and a cornstarch slurry. Alongside some creamy, buttery mashed potatoes….its a game changer! I hope you try it.

one of my favorite sandwich meats. hot meat loaf on thick-sliced sandwich bread (the bread slices and meatloaf slice should all be the same thickness) with good bbq sauce.

I loveeeee meatloaf! I’ve always felt like I’m alone of this but my dads is truly the best. Idk how he does it he changes the ingredients every time and always says “you just you what you have” this included stale cracker/bread! I have so many fond memories of him asking me to help and I’d run over and dig my hands into the ingredients and squishing them together! 😂 it definitely not something I order due to the rush of it being poor quality but the restaurant Reunion has the BEST I’ve ever had!

I think Chef John's savory buttermilk meatloaf is my favorite to make. The best I've ever had was at a cafe. They obviously would not reveal the recipe, but it was definitely a mustard-flavored as opposed to ketchup meatloaf and had caraway seeds. This Chef John's savory buttermilk with mustard glaze is the closest I could find to that one in flavor.

I probably wouldn’t order meatloaf in a restaurant but I do like eating it. I make my own. Mashed potatoes with a veg and brown gravy make it a perfect cold evening meal. Especially when you can make sandwiches with the leftovers.

As a mom of young kids … I love meatloaf. It’s easy & the family likes it. I will say, the only meatloafs I’ve ever enjoyed are cooked in the loaf pan … it seems to take a bit longer, but the texture is way better & you don’t lose as much fat

The best way to eat meatloaf is as leftovers. Slice it 1/4 to 1/2 inch thick and fry it up like its Spam. Put that on a sandwich with whatever toppings and condiments you like on whatever bread you like. I love it basic. Lettuce, onyo, tomato, mayonnaise and yellow mustard. It's pretty darn good. Just make your sandwich your way.

Meatloaf is a Great Depression dish. The point of it was to stretch your meat out because it was so expensive. Meatloaf is not a restaurant dish. Its a home dish that you eat because it reminds you of your Mom or Grandma making it and reminds you of being a kid again. Its the Ratatouille from said movie when the critic eats it. Thats the vibe. Also, you don't have it by itself. You eat it with a potato dish and a veg. Its not meant to be by itself.

I like coating my meatloaf in breadcrumbs rather than Ketchup glaze. The breadcrumbs fry in the fat that comes out of the meatloaf and give a crunchy crust that is pretty tasty.
