As a Cambo, we do add those condiments, just not that excessively! Probably a tablespoon of each thing (I also have Thai chilies on the side when I want that extra kick) so it doesn’t take away from the flavor of the kathew broth 😊 so happy to see you enjoying this as I could eat it for breakfast, lunch and dinner

Your last observation of the broth being very plain and supercharged with condiments is probably correct. Im Hmong and majority of us tend to eat it like this too. I recall growing up in the 90s there wasn't a lot of pho restaurants in my area, or maybe more so my immigrant parents never took us out to eat anywhere haha. So when they made a big lot of pho broth it was just actually chicken stock. And its usually to feed a lot of people, thus it tend to be watered down. We didnt know what real pho tasted like, it didnt have the flavor profile of the pho spices. Instead we used beef paste and pho spice paste if we wanted that pho flavor. Also if course saracha and hoisen, fish sauce, lime, sugar, dry peppers, etc. Ahhh its the good stuff. Some people tend to make a ridiculous bowl such as the one you made, but not very many of us. Ive seen i guy do that once snd thought man he mustve lost his sense of taste by over loading it all the time, and that certainly is the case. That dull their senses and in order to get that same flavor smack again they tend to increase the amount of condiments used each time. Definitely a sodium bomb.

This is why I don’t make the 8-12 hour pho when people come over. They over season without even tasting. Instead, I just use pho cubes and beef paste with no bones for my “broth”. There’s no point when they’re going to put peanut butter, soy sauce, and all kinds of crap in pho. They just eat the noodles and throw all the broth away because it’s too salty. Hmong people don’t deserve good pho.

Cambodian born and raised here. I’ve never seen anybody in my life put that much cilantro and chili sauce in their kuy teav before. Kuy teav is usually consumed for breakfast and we do like them light. Beside the noodle and protein. We do like with bean sprout, fried garlic and just tiny bit of hoisin sauce/chili sauce. Quang’s version looks so good that makes me want to try it now. 😅

The most I ever put in pho and kuy teav is hoisin sauce, sriracha, and a slice of lime lol the broth is usually flavorful enough :-)

I’m Cambodian and I pretty much do the same and I love it with fried dough from time to time. Don’t know the actual name of the fried dough/bread but I’m with you on this one Quang! I’m drooling now 🤤

🙌. You gotta eat it with seasoning sauce that comes in green labeled bottle. Add sliced Jalapeños or pickled chili peppers in the sauce and take some of it and pour on your noodle on chop sticks! It’s delicious that way

Cambodian here mum makes a crazy dipping sauce and we can put in our noodle or on the side don’t know bout the chilli flakes in the noodle bro but each to there own cheers for shouting us out.

I'm lao. I do love my pho extra spicy. But not the way you did it. We like to have fresh thai peppers on the side with shrimp paste. And also like fresh veggies like lettuce, long green beans, and celery. Spring onions. The veggies help balance the spices a little and add more to your taste buds.

You really should cook Chicken (or fish) Amok. Absolutely delicious Cambodian food. My brother's wife is Cambodian and I wondered one day what food they eat, so I hit google. I found the Chicken Amok and it was one of THE most delicious things I've ever eaten. Well worth trying.
