Yatai are small food stalls in Fukuoka, Japan. They’re scattered throughout the city!
📍 The specific Yatai we dined at is called Yatai Takachan.
We tried Yaki-Ramen (it was called Grilled Ramen on their menu), which was my FAVORITE dish for the day.

Have you ever heard of "Yaki Ramen"? Do you think it's the same thing as Yakisoba? 🍜

It's more akin to Pancit Bisaya... Legend has it that post-WW2 Filipino cooks in US Navy ships bought Japanese noodles and rice from local shops as it was cheaper than commissary shops at port. Since Japanese and Filipino food are similar to each other, they created a version of pancit using whatever ingredients they found in Japan, which was palatable. Yaki ramen is similar to Pancit Bisaya in that it has only minimal ingredients and relies heavily on the stock and sauce.

it's the same thing, ramen noodles are a type of soba noodles. This is a lot like asking what the difference between ramen and aburasoba is, there isn't a difference in the noodle just minor differences in how the broth is prepared. Ramen noodles are a kind of soba. Yakisoba doesn't have a singular taste since it's more akin to a cooking method or form factor than a singular dish, anyways, it's like saying fried rice should be a specific way. You get better answers if you Google similar questions actually in Japanese if you can read.

The main difference between yakiramen and yakisoba is the noodles. Yakiramen uses ramen noodles, and yakisoba uses… well, soba noodles

google: Yakisoba does not use buckwheat soba noodles. Instead, it uses mushi chukamen, which are steamed Chinese-style noodles made from wheat flour, kansui, and water. These noodles have a yellowish color due to the kansui but are not egg noodles.

@@hel2727Yakisoba doesn’t use soba, they actually use chukamen, which is a very common and old-school type of ramen noodles in Japan. But yakiramen uses a Fukuoka style ramen noodles. The biggest difference is actually that Yakisoba uses Japanese Worcestershire sauce or its thicker variants.

You *CAN* have yakiramen in the states! Fried noodles such as yakisoba, yakiudon and yakiramen are actually some of the dishes that come out best when made at home. Unlike other foods which require special skills or equipment to make, all you need is a very hot plate or frying pan and you can get great result. Just follow your favorite yakisoba recipe but substitue the buckwheat noodles for thin alkeline noodles, and flavor with ramen style broth or toppings. For example, if you have leftover bone broth, reduce it on a hot grill and then make yakiramen in its residue. Will come out almost as good as any yatai in Fukuoka!

I was thinking the same thing! Make it at home, and it's even better because you can customize to your own taste preferences on any given day. Inexpensive too 😊

yakisoba is a bit of a misnomer bc it doesnt use buckwheat noodles, but alkaline noodles (chuukamen, or what a lot of english speakers call ramen noodles)

In Hawaii we have sinilar since our noodles are called, Fried Saimin (a chinese name for Ramen) and although most places dont make it like this...I recall saying diff restaurants make diff "fried saimin" and I recall some making them more saucy and/or sweet. I think one was in Wahiawa but I dont remember the restaurant. There's so many ramen and saimin shops though...every place is diff. I'm sure you can easily make this yourself

In Okinawa, we prefer yaki somen. The Japanese somen noodles don't work but in Okinawa, we have our own somen noodles. The closet you can use in place of Okinawan somen is somen noodles from Taiwan. Japanese somen falls apart and becomes gummy.

Heard of this recently. Looks yummy. Might try creating a Filipino version of this too. Tried making Filipino yakisoba a few times using canton instead of soba. Used Filipino ingredients and way of cooking, since i dont have the grill. Silverswan soysauce, Filipino brand tomato ketchup and Worcestershire sauce etc. Cooked it almost like how canton is usually cooked but toned down the saltiness of the broth. When the water is mostly absorbed, added the veggies and then the home made yakisoba sauce. Put flame on high mix till done. Basically, canton guisado with yakisoba sauce. Lol It was a decent attempt if i do say so my self. Oh, the only non-Filipino ingredients were the mayo, bonito flakes, ao nori.

@@user-zr9hu3tf1y the yakisoba sauce i made has soy sauce, Worcestershire sauce, tomato ketchup, oyster sauce, sesame oil. Make sure the Worcestershire sauce is the prominent flavor. That is what i usually notice in yakisoba. I want mine to just be tangy but not too much.

A restaurant here in my city has Yaki soba,Ramen and glass noodles. Yaki glass noodles are my favorite (potato based noodles)

The city where I lived there is, or at least was I haven't been in a few years, at the food court in one of the malls they made this. It was so good. My grandmother and I would get it at least once a week.

Got yakiramen here in the states (WA) just a couple weekends ago! Ordered ramen and was surprised when there was no broth but the flavor was AMAZING so I didn't care and it was like yakisoba which I love too

yakiramen is a fukuoka specialty thats similar to yakisoba, but uses tonkotsu ramen broth to season the noodles/make a sauce. every yatai will have their own recipe, but you could definitely approximate it at home!

Noodles look delicious. At least you're not shoving the noodles down your throat and making loud slurpy noises as if you hadn't eaten in a week like all the other videos I've seen. I've never seen people eat like savages in real life. Thanks for keeping it real!
