It's so funny cuz I had baked potatoes all the time with my divorce Dad. In his defense baked potatoes were kind of his thing even before my parents got divorced when he would have to do the cooking there was a good chance that we were having something with baked potatoes that night. So he just made what he knew when they got divorced. They were always good though. He would do chilies sometimes as a topper for it other times it would be sour cream and he would make bacon up and chop it up afterwards and then have some green onions shredded cheese all that good traditional stuff. I remember one time he was all happy because He borrowed Terminator 2 from a friend so we were going to watch that and have baconator potatoes so he did baked potatoes and then he baked up 2 lb of bacon and chopped it up and we just smothered our potatoes with bacon and cheese. We had ranch dressing that night too It's some type of dressing for it beside sour cream. That was a pretty good night me and my dad and my little sister having a movie night and baconator potatoes. Haven't thought of that in forever but thanks for letting me share that memory.

No dice up some potatoes into an oiled 9x9 pan season. Then stir it up to make sure oil and seasoning are on all parts of potatoes cook in oven at 420 for 30 min. Stir again so as not to burn to pan the cook another 30 min. Plate potatoes add butter and sour cream, or just smother with ketchup.
