As someone who never watched any of the Shrek movies in English I'm gonna assume you wrote that joke for Shrek2 but when traveling back in time to boast about again it you went back too far and they put it into Shrek1 instead

My personal headcanon is that this time traveler is actually Smokin' Joe Rudeboy. He goes to the past with dreams of fame for "writing" Shrek 2, but those dreams fell through. He became despondent and jaded, eventually acquiring the fame he sought, but not for the reasons he intended: having the fastest fingers in the whole wild west.

I love the idea that Shrek 1 is a dreamworks origin, but Shrek 2 is an adaptation of an older multimedia performance from the Wild West. Like Dreamworks writers found this out of context piece, wrote and created a movie version of what the first one might have been, and then adapted the actual piece when that went well
