Most of the time you don't need the wiring harness that gives you a temp sensor. Out of the 50 or so iMacs I've put SSD's in its only been the early 21 inch (2012/2013) models that have had issues with missing the sensor. Also the ifixit kits are a little overpriced as you can buy everything you need for less than $150 so long as you have the small torx bits. Most adhesive kits come with the pizza cutter, there are other SSD adapter mounts you can buy and as I said you don't really need the harness. Other than that good video, just be extra careful with the screens on the 2016 to 2019 models as there very expensive to replace.

Thanks. What about the 120gb M2 SSD part of the fusion drive? Do you create the fusion drive again or simply use only the new SATA SSD? That M2 driver is much faster, but 120gb is not enough for the system.

You will simply use the SSD - (No Fusion Drive will show up).

i have a 2012. Can i get away with not putting a temp sensor on it. And I want to start from scratch. Do i just get a Mojave drive that they sell to install the software

The temp sensor was attached to the wiring harness from iFixit - I had to mount it. My OS is Catalina. I was able to restore my desktop from time machine
