1/2 Tbsp sugar (for yeast)
1 tsp sugar

Top the naan with some Ghee(clarified butter) and it will be the most amazing naan you will eat I assure you. Ofc excluding the flavoured naans like garlic naan and such(which too go amazingly well with ghee).

I'm Guyanese and West Indian, my family doesn't mention marriage because the men and women cook but it's a shame and embarrassment if you can't cook well. Even if it's one thing you do especially well. "No one wants to eat square and hard roti"

As a gratitude to Chef Floyd Cardo, I would like to introduce to more breads like Bhaakri (which can be made from rice flour, sorghum flour), Rice Flour Rotis, Theplaas (Gujarati flatbread with fenugreek as one of the ingredient), Ragi Rotti (Little Millet Flour Flat Bread), so on. I am unable to remember more. Every state and community has its own or a variant of some breads.

There are more. Ranges from sweet to savory. There dhapate, dhilda from Maharashtra, stuff roti, stuff parathe from the north India, then there are roti from other floor from rice, millets, corn etc. from north to south of India. It's a challenge to give an exact number. Food from India is really diverse.

Not weak flame, one should not add oil, ghee or butter, while preparing the dough. Prepare the dough with only the whole wheat flour, water and salt. Then the rotis will rise.

I had an Indian math teacher who would say just that when you explained how you solved a problem or what trouble you were having with one. He always said it rather spontaneously and would then rush into helping you get through the problem or praising you for thinking out of the box. Very nice guy, but he was a bit all over the place and hard to keep up with in conversation at times. Shame he got so many racist comments and such, he's a good teacher. Glad to not have to do math anymore, bad sad that he doesn't teach me anymore.

Wow! Thank you for this video. I tried to make roti years ago but it never worked right for me. I think it's because I used butter and not ghee or oil. I will be trying the naan as well as the roti. .... And I just did. It turned out amazing. Floyd Cardoz showed me something new--the part with holding over the open flame. This made it! I just found out he died from Covid-19. My sympathies to his family and friends. I'm so sorry for your loss. May he rest in peace.

My friend whose grandparents grew up in the Caribbean introduced me to roti. The place she took me made them in the Indo-Caribbean style (I think the owners were from Trinidad). Absolutely changed my life.

yup. sahi baat :-/ iyam yet to see the complete clip (got turned off by seeing the ring, bracelet/ watch being their while making the dough) yes, there ARE urban desis who do use cling wrap frequently (if it is within reach) using a damp cloth though (if it is to aide fermentation) is avoidable. better to do the plate thing and if needed seal it with anything gooey like the dough itself

Actually in naan yogurt is usually used instead of Yeast there is a different bread which is known as khamiri roti which means Yeast bread

I love paratha! I had it for the first time in India. I love how it's flakey, but still solid enough for dipping in curry. Yum! Thankfully there's a restaurant nearby me (in Tokyo) that makes it. It's way better than nan.
