I always mix my chocolate chips in with my mixer , everyone tells me not to do that but to hand mix them in . I am glad to see you use your mixer to mix your chocolate in to . Love your videos .

I've been WAITING for your version Gemma!!! Thanks so much as always ❤️ Yours looks much less complicated than most copycat recipes. I saw others say to use cold butter and to not whip the ingredients. Also, some say to skin the walnuts as it can be very bitter. Is that true?

Oh no, I don’t agree about the butter. Check my article on why creaming the butter is important, www.biggerbolderbaking.com/how-to-cream-butter-and-sugar/ As to the nuts, the skin comes off naturally when you lightly toast the nuts. Once it’s toasted, the bitter taste goes away, even with some skin still left on it. Gemma I have used many of your recipes. As an "old guy" and having an empty household my friends look forward to my delivery visits LOL I likely missed it but how long do you wait if you have frozen the dough? Overnight in the fridge? How is young George?

Hi George. You can chill the dough for at least 2 hours. You can also freeze it. Just take it out of the freezer when you want to bake. Let it sti at room temperature until it’s soft enough for you to easily scoop or form them into balls. Pop into preheated oven and bake. You can also form them into balls, cover, then freeze. Georgie is growing up too fast for his Mamie 😊

Gemma never fails !! Thanks for the recipe. Again could I use monk fruit / erythritol instead of sugar ? Same for the brown sugar. Also I preordered your cookbook, so excited for that !

Hi. Technically, you can use the sugar substitutes you mentioned. However, you can expect a different result in terms of structure and texture. Sugar not only sweetens, it reacts with the baking soda when heated giving the cookie the structure needed.

Hello Gemma from Ireland, those look fantastic, even through not a massive cookie fan, I'll try those, I heard of the famous New York bakery, I'll have to half the sugar as would never use that much sugar as don't like anything too sweet

Im not a big cookie fan either but i had them back in 2000 or 2001 and it is Definitely the best cookie ive ever had. Ive not made this recipe but if theyre like levains you wont be disappointed.
