Andrew open a pop up in LA - Just Sauce. The menu is just sauces paired with mild plain bases like vanilla ice cream, white rice, potatoes, grits, slice if sourdough…The entire menu can live by your credo that all dishes are just vehicles to get sauce to your mouth lol

When I think of fall, I definitely think of chestnuts! My family has a Thanksgiving tradition of making a savory sticky rice stuffing with shitake mushrooms, chestnuts, and fried shallots and it's SO GOOD.

In France it's very classic to have compote as the middle layer of an apple tart. I make my compote with a good deal of cinnamon, a touch of brandy and usually like a belle de boskoop apple, or some other tart cooking apple. I cook the compote until it's fairly thick, that way it doesn't prevent the crust from getting crispy. Usually i cook the tart until the edges of the apple slices become ever so slightly charred, at 180 C. My family eat it slightly warm if possible, and with crème chantilly, wiped cream essentially. I'm hungry now :/

A french canadian tradition in the fall in my family is making Chow Chow, which is a fruit ketchup. The fruit is usually apples, peaches or pears. I feel like Inga might like it, it's usually served with Tourtière.

I love the fall season. Cooler weather, apple picking, fresh apple cider (sometimes warm in a crockpot with spices and a good rum), stews, and other comforting food are great to have when it's not hot out. I lost the recipe, but many years ago I made a harvest stew that is similar to beef stew but didn't have just the typical meat and root veg in it. I believe it had turnip and some sort of squash with other veg and rather than beef it had lamb or pork. It was very good. You can do so much with apples and fall favorite dishes and also different varieties of food served at Thanksgiving. Just not that soupy green bean casserole or yams with marshmallows on top. Depending on where you live and your family, people could have different types of stuffing they may like. Mine always made two types. The typical Stovetop or Bells variety adding cooked onion, celery, and sometimes minced pork then also a French Canadian one with minced pork, mashed potato, onion, cinnamon, clove, salt & pepper.

@@spacespace652 There is a KZfaqr Berryl, who makes videos based on themes for food from different countries. Example: Breakfast around the world, Lemon recipes around the world, and so on. What is different in her videos is, instead of her just showing a famous recipe, she asks her community for their recommendations and they get to tell about their story and memories of the recipe. It's very personal and knowledgeable. Recently ATE "came up" with a new video idea, wherein they asked their community for breakfast in their country. So instead of atleast acknowledging that they got some inspiration from Berryl's channel, they sent her a legal notice saying that the video has nothing to do with her and any attempts from Berryl's side to claim otherwise will be penalised or something along the lines. Hope I've done an okay job of summarising the whole thing. Apparently this is not the first time BuzzFeed has tried to steal Berryl's content.

You guys have to try a pumpkin ghonto. It's a Bengali dish. It's mashed pumpkin with a lot of spices and sometimes prawn/shrimp. It's the perfect balance of sweet and savory. To have it with rice is just a delight.

We eat apple sauce in savory dishes all the time: with fries and grilled chicken, with beef stew, with boiled potatoes and pork sausages,... That's also always one of the options on the kids menu in restaurants, it's something everyone loves. :)

My faaaavorite savory dish with fruit is pan-fried cod filets (fried in butter seasoned with some white and black pepper) and a sauce made with bananas, apples, red peppers and mild curry powder. It sounds weird but it's soooo so good, the bananas and apples become soft and the red peppers have the perfect amount of flavour to counterbalance the sweet from the bananas, paired with the salty and crispy fish it's something I could eat for days!

When we make pork loin we use apple butter on top--it is better than apple sauce because it isn't so thin and runny, and bakes to a nice consistency on top. Also, roasted grapes are great with roasted brussel sprouts and walnuts. It's one of my favorite autumn dishes, as the brussel sprouts are both crispy and meaty and the grapes are tender and sweet.

I took a recipe for sausages with burst grapes and substituted tofu with an amazing savoury sagey marinade for a foraging party in the Fall (using wild grapes) and everyone freaked out. People were begging for the leftovers

Here in Perú we eat these roasted rolls ("enrollados"), mostly in Christmas. They can be made with chicken or pork meat and figs in the center, or also cheese and ham. We roast them in the oven with a delicious sauce made with soy sauce, orange juice and some more condiments.

Something my family makes during the fall is a snack called puppy chow haha I know it sounds unappetizing but it’s so simple and good. It’s basically plain Chex mix with powdered sugar and there is also a different take on it which my family called white trash haha that’s just plain Chex mix with melted white chocolate and it’s def something I always think about when I think about winter/fall food cuz you can eat it with your coffee or hot cocoa hehe😋

Independe day is huge here in Mexico so we love to have typical mexican dishes all over September and then in August Halloween and Día de muertos arrived and we go crazy with pan de muerto (bread of the dead).

I've got some battleford apples and they're like a honey crisp apple. they're perfect for pies when they're tart, but if you let them ripen, they're awesome to eat off the tree or else make apple chips!

When my kids were young I used to make pink applesauce. I would throw a bunch of sliced apples into a stockpot with the skins on. Lemon juice and sugar. Boil it for a long time and put it through a food mill. So fresh and so pretty a true blush color.

I make a pea soup / stew where the only mandatory ingredients are chicken thighs, chicken stock and peas. I use frozen but I bet fresh peas would be excellent. I add a tonne so it really is about celebrating peas. You can jazz it up with onion, potato, pancetta, chorizo, pesto as a finisher, smoked fish could be cool, whatever you like.

A great condiment for hotdogs are plum-ketchup, which is basically just replacing tomatoes with plum. I imagine fig-ketchup would taste great as well, but it would need more balance in terms of sweetness. I actually think apple-ketchup could be even better.
