Wow, they are so skilled and efficient! when i prepare something for myself, the portions are often much too large, and the efficiency is terrible... so that is why i like to go to eat to real professionals, who have the fresh foods ready, the skill, and the kitchens to do it right... ... ...

Grilled eel is a dish that requires especially long training and has a long history in Japan. The sauce used has been passed down from generation to generation! Thanks for watching!!

ここ知ってます！（笑）飲食店って表の顔（座席などの店内）と裏の顔（厨房など顧客が見ないところ）がありますが、この細部まで気を使って、おもてなしになると思っています。何かのきっかけでのぞくことがあってがっかりすることもありますからね。こちらの鯉の洗いは確か滋賀のお店からののれん分けからの影響からですかね。鰻と鯉って一緒に提供されるところは確かに珍しいですもんね。
