What you are catching is the arrow squid, a true calamari has wings that run the full length of the body. A big tip for you is to dispatch them quickly but don't put them directly on ice, keep them cool, put them in a stiff net bag and tow behind the boat for a short distance to clean the outer skin off them. cut into rings and coat in seasoned flour or bread crumbs and cook quickly.

My inner teenager had to laugh at “squid marks”. Also if you crush them right behind the eyes they die instantly and will turn white instantly. Toss them in a dedicated/separate cooler of ice. Saves the staining of your boat with the ink and clean up.

Hi Nick, my Father taught me how to cook squid, the tentacles always take longer to cook you have to cut them into 3 or 4 pieces so you cook them first then when you cook the rings once you put them into the oil you count to 5 then pull them out they are really tender that way and with the strips once the curl you take them out

After you clean them and slice them into rings, put the rings on a plate/sheet pan and put it in the freezer for 20-30 minutes until they’re really firm, but not completely frozen. Then, batter and fry. They’ll hold they’re shape a lot better and be more evenly cooked in the fryer. That’s why they weren’t as tender as the tentacles. Also, thinner sliced rings will be more tender. 20+ years in the kitchen & I’ll cook anything for the StanzFam!!!

there are some little secrets to cook squids. squid will be soft but crunchy when they are still alive on the cutting board, that's kind of difficult to follow that practice. but we know that, when squid touch fresh water or ice (alive or dead), their skin membrane will becomes tough to chew. you can either put ice in empty soda bottle, or put squids in plastic bag to solve the problem. japanese have their way to do it, they put squid in the bottle. it was a old trick to preserve food before refrigation era. prepare a large mouth bottle/jar with top cover, 1 part of "thick dark" japanese soy sauce, 1 part of cooking wine (mei rim), 1 part of drinking rice wine (sai kei), 2~3 tea spoon of sugar. half fill the bottle, for a 2 litter coke bottle size, you can put 2~3 live squid inside (tactaicle side first, or you will be cover in ink and soy sauce), tide the bottle cap. no need for refrigation but do require stay in shade cool area in the boat (ice the entire bottle is a safe proof idea). when you reach the pier, it is ready to eat, and eat raw. clean them as usual (do not wash it with fresh water), fine slice them in thin strips. you can eat the liver too. the osmosis pressure difference of that soy sauce brime solution will kill most common bacteria known to cause disease. you can also grill them whole or oven them, it is pretty fast to cook. dry them up from the brime and you can bag them in the refrigerator too, usually a week is still safe to eat. yea, that's pretty strange dish in the eyes of westerners, that's where the culture difference is. to avoid tough squid, we usually "cross cut" the squid (some people call it "checker", for obvious reason), it cooks faster, some people use self rising flour and beer to coat it (in fact, any carbonated drinks, even coke will do), that will give a crunchy shell when fry. use high heat and short time, 2~3 mins max. salt it after fry, you can use less salt with same taste.

@@StanzFam by the way, how deep you get those squid? swordfish deep? squid from shallow water have less water pressure when growing (I believe it is 10ft deep = 1 atmosphere pressure?), the deeper they live, the tougher their body, even they may be the same species.

Tips with squid, 1. clean it as soon as you catch it (easier to peel and clean) 2. Marinate in milk overnight or a few hours 3. Don't need to cook it for very long talking a few minutes either that or cook it for longer. However since you tenderised it with milk this tip shouldn't matter too much

@@StanzFam Also, aiming for smaller ones are tender. Some people also use fruit juice or kiwi to tenderise it faster (few hours), slicing it with diagonals/diamonds can help as well if you don't cut it as rings. Use some Cornflour (instead of plain flour) can also help with the batter so you don't need to fry it as long. Using Sparkling water or beer, This helps the batter be light and crispy and won't take as long to achieve a nice crispy texture
