Instant Pot Potted French Yogurt (2023 UPDATED)

2023 Video Update: After trying many French potted yogurt recipes, I've produced one that has been successful every single time.
I use an Instant Pot Ultra, which makes the first (milk cook) much easier, but you can do the first part stovetop and the rest in the Instant Pot. You can also use other small pots (vs. repurposed Oui jars) with comparable results.
I know this isn't great editing but was trying to get this out there quickly for the folks that asked. THIS IS A REPOST OF MY ORIGINAL THANKS TO KZfaq AND GOOGLE MESSING ME OVER ON MY OLD CHANNEL! DETAILS BELOW THIS INFO!
The recipe below makes 6-7 Oui sized (~5 oz) jars of very thick, French potted yogurt. I use Fairlife whole milk (lactose free). It is more expensive than regular whole milk, but has a lot more protein, which works better for thicker yogurt.
I plan to post more recipes, so subscribe to be notified when I do.
RECIPE
* 4 to 4 1/2 cups of whole milk (higher protein better)
* 1/3 to 1/2 cup of sugar (to taste)
* 1 tsp vanilla paste or extract
* 1/16 tsp yogurt culture or 1/2 jar of Oui yogurt

ANGRY NOTE ABOUT THIS VIDEO: Copied from my old channel. Google / KZfaq has caused me such pain. For over 18-months I've been trying to get them to give me back my old channel (VinnieDaArm Central) and they keep telling me to login. But I can't.
Over a DOZEN emails to support and the robot answers got me nowhere. I had a Gmail account that got hacked and so they closed me account. Now Google gets to make money off my videos and yet I can't get credit for them. Please do not watch the old versions and only watch these on the new channel in my verified account.
It was partly my fault for not having a backup admin on my old channel, lesson learned. Do NOT leave yourself as the only person that can recover a KZfaq channel. The increase in my blood pressure shows that being a lone poster is a bad idea. And KZfaq support is just non-existent. I'm so angry about it all but now I have to freaking re-upload on my new channel and lose all of my followers. 🤬

Could you please clarify how long yogurt remains safe to eat before it expires? Thank you for this great tutorial.

Instant Pot directions say never run it without water. So, for safety reasons, I'd always use water. With that said, I have done it without yogurt since the temp is so low and there is no pressure cooking involved. 🙂 I love the yogurt this makes. So good.

Could the jars be heated in a slow cooker instead? What temperature is needed?

A slow cooker (like a crock pot) probably doesn't get the temp low enough. They typically run about 200F while the yogurt setting on the Instant Pot is about 110F. 200 would cook it vs. just providing the environment for the microorganisms to grow and make yogurt.

dont need to add water to the instant pot? just put them in dry?

I've done both and haven't noticed a difference. I know the instruction book says never use it without two cups of water (I have the 6qt), but I've done Yogurt mode without it. Probably not the right way, but I've done both without any issues. I would say to avoid issues with your warranty or sometimes getting a burn error, a cup or two of water is safest.
