My professor always used mayonnaise as an example for bingham plastics. I mean, it was accurate, but there's something ever-so-slightly disconcerting about hearing mayonnaise brought up repeatedly with such a dry subject matter, pun not intended.

It seems that dilatant and pseudo plastic have been interchanged.It should be the other way round.

I do know what you are thinking, but the curves are functionally correct. The way that each of the Non-Newtonian curves looks depends on the initial slope. It also depends on if the shear stress is plotted on the vertical or on the horizontal. In the lecture and in the thumbnail drawing I show the slope for all three (Dilatant, Newtonian and Pseudo-Plastic) to be the same as the shear rate starts to increase. If the slope of the pseudo-plastic was greater than Newtonian at the zero strain-rate condition then the resulting pseudo-plastic curve would be drawn above the Newtonian line, not below as I have drawn it. The main thing to look for is how the slope of the curve changes as the shear rate increases. For shear-thinning fluids (pseudo-plastics) the slope should decrease (the fluid becomes less viscous) as you increase the shear rate, and for shear thickening the slope should increase (the fluid becomes more viscous) as you increase the shear rate. Hope that makes sense.

with all due respect, that's what happens when you don't understand the fundamental concepts behind fluid mechanics, but rather just memorize the diagram and its labels. Cover basic concepts and picture the fluids according to their laws of physics, in reality.. Great job explaining, @ron hugo.

Is it the amount of sheer stress or how fast this stress is applied? Because whether you stay still or run in a pool filled with cornstarch you still exert the same weight. But in the first case where you stay still, you will sink.
