Iron Skillet Southern Fried Chicken - The Hillbilly Kitchen. Heirloom Recipe Perfectly seasoned, crispy, tender fried chicken is as easy as your granny made it look. With just a few simple tips your fried chicken will be as good as those Sunday dinners you remember from long ago.
Fried chicken can be a little intimidating and really is one of those recipes that needs a little explaining. I share everything I have learned after frying chicken for over 35 years and some of my worst mistakes.
Bring Sunday dinner back at your house and make some special memories with your family.
Put God First!
Ingredients:
2 tablespoons Honey
1 ½ tablespoons Black Pepper
2 teaspoons Onion Powder
1/2 teaspoon Cayenne Pepper
1 teaspoon Cinnamon
1 cup Buttermilk
1 large Egg
2 teaspoons Salt
Chicken (bone-in or boneless, skin-on or not, breasts, legs, drumsticks, and/or wings)
1 1⁄2 cups All-Purpose Flour
1⁄2 cup Cornstarch
1 teaspoon Baking Powder
Oil for Frying
2 cups Milk or Broth for Gravy
*All spices are optional and may be substituted with your favorites

First of all, I love your "rambling". It's how I learn all the little secrets that made up old-fashioned home cooking. Please don't listen to the negative comments. Don't change a thing, sister girl! Now - it so relatable about missing out on the important lessons about frying chicken. I was too silly to pay attention to Mama and them. I will be playing your video while I make my next attempt. You've done it again. Your videos should be played for HomeEc or whatever it's called in schools these days. (Is it even taught anymore?)

"They" ended Home Ed & Shop class & civics & the school prayers & the Pledge & so many other things YEARS ago & let political correctness take over - hence the mess we're in. Channels like this one are SO important now!!

Not in my daughter's school. I told her to sign up and she said that class wasn't offered. I was floored. How are these kids gonna feed themselves once on their own. I learned so much from home Ec. Class.

Just heard about your husband passing away. So sorry for you and the family. I lost my husband four years ago this past august. It was rough , we were together fifty years. But thank the Lord He saw me through it. I still miss him ,but it's got better. Stay active be around family some till it's better on you. Cooking will help you also, keeping you busy. My Filipino mother in law showed me the coolest trick about chicken - she'd cut the chicken breast into halfs (though the ones on your show could have been 1/3rds) - that way they'd be about the same size as all the other pieces you're cooking - and more easily divided when serving to the family of several people too! 👍 Delicious looking recipe you have there. 🌻

I always cut the breast in half also. I always use a meat thermometer to check the chicken, it doesn’t have to be so precise right in the exact middle middle middle. They just want you to aim for that. Chances are the chicken will be warmer than 150° Anyway when you do your reading so if you’re I sent a meter or two off, you’re gonna be fine. I also use a thermometer to make sure my oil is warm enough. I put it in at 3:50, and then it’ll cool down and be perfect. Your chicken looks wonderful. When I make chicken gravy, I always use my own chicken broth, and then a little bit of heavy cream so it still is high country gravy, but it’s a better chicken taste. The best thing for you is to get a flat bottomed wooden spoon. They only cost five dollars but they scrape the bottom of the pants so much better than a fork. You’ll find it. It’s a tool you’ll use all the time. Keep up the good work enjoy your show very much

You don't know how happy and thankful you have made me! I live in Tennessee now,but I grew up in Idaho. I have tried frying chicken for years to no avail. My southern friends would never tell me what I was doing wrong. Their fried chicken was so delicious and mine was awful. You taught me how to make fried 🍗 chicken and I am so grateful. Be blessed!

So thankful we've got an old fashioned grocery Store just about 3-4 miles away and they have an original, old fashioned butcher shop. They ALWAYS have cut up fryers packaged and ready for you. This store has been owned and operated for 75-80 years by the same family, 3 generations.

I enjoy your stories and your testimonies! My mother would tell us when she was a child she would help my grandmother fry chicken on Saturday nights and then set the table and put the chicken on the table before covering everything with a sheet. When they arrived home after the Sunday service they had the chicken ready to eat. My dad said my grandmother made the best fried chicken he had ever tasted and he always looked forward to a fried chicken dinner at her house.

years ago we just threw a tablecloth over the food on the table to be set up for the next meal and no, for the most part there wasn't ac. i still do things like that, just make sure it's not 500 degrees in the house!

I don't remember my grandmother but I remember my grandpa he was 99 just a couple days shy being 100 when he passed and he used to put the stuff on the table and put a tablecloth over it and he lived all those years

What accent? To me, she speaks perfect English... LOL... Maybe ya have to be from somewhere around Tenn to catch every nuance, but I am, and I am in love with the way she talks... Anything else would be totally foreign. She is who she is, and I couldn't imagine it being different... Her recipes call me back to what Grand Ma used to cook, and how she did it... Woodstove and minimal utensils, Gawd how did she do it? Pay some attention, and maybe you'll get a clue... Gawd, I love gravy. -pp

I made this chicken recipe tonight, I marinaded it last night or overnight. I never could make fried chicken before, even though I do cook a lot. I watched your video over and over, and found that I had been making many mistakes. But, for the first time , I finally made fried chicken, and the batter didn't fall off, or, the chicken pieces stick, etc.. My family loves fried chicken, so I really wanted to make fried chicken for them. Not only was this my first time successfully making fried chicken, but this chicken was very very delicious! I loved the Honey and Cinnamon, they made such a great combination! I made the country gravy too, and it was also delicious over top the fried chicken. I think your recipe for Fried Apples would compliment this dish too. Thank you for showing me how to make my first "successful" fried chicken...I use to try to make it, but made so many mistakes. Also, I used ten chicken thighs for this recipe. xo

We always panned fried chicken. But only sometimes we put in the oven, mainly to stay warm along with the biscuits while the gravy was the last thing to get ready and table to be set. The thing is chicken wasn't nearly as large as they are today. We could almost cook a cut up whole store bought chicken in the same size skillet being used here. I can now barely get 3 chicken thighs in the same skillet. And i have her Lodge skillets that probably a 100 years old..So maybe something wasn't missed in the kitchen. If my granny or my mom could see the size of today's chicken , wonder what they would say.. And again thank you for what you do. I honestly believe you are the best cook on any social media or at least equal to our grannies. They would and probably are so proud of you.

I am 68 years old and FINALLY found someone who knows how to really fry chicken. And I am pretty sure my husband is going to want this chicken every week, since fried chicken is his all time favorite food. Thank you for your videos! I finally understand what ive been doin wrong OVEN, when i was first married (age 15) i invited the in-laws to dinner. I had no clue how to cook a single thing!! Had to have a neighbor cut the chicken up, everything was terrible BUT the gravy!! Chicken was raw in the middle taters were burnt but my Father in law said, welp the gravy was good 🤷🏻‍♀️ Thank you so much, God Bless you and your family I have a feeling we are going home soon 🙏💯

One thing though never put a cover on the pan because it will mess with the crispy skin because of the steam ask me how I know because I ruined a couple chickens you work so hard to get the crunchy bits

I have always been afraid of frying chicken because my mother used high heat to fry, but you fry yours at a lower temp, then finish in the oven! Thank you for sharing your recipe! ❤️

Love the fact that both Becky&the Contessa don't drown every dish in cilantro as every food channel show now does-but it's soap taste to millions&it's degrees-some just think it's dishwasher but it's real Becky's spice mix add to food not hide it

My mom said when she was growing up every Sunday my grandmother (that passed before I was born) would make fried chicken & mashed potatoes & gravy with biscuits & green beans. She blew my mind when she said she *hated* fried chicken till she got older. She said she'd eat the sides but leave the chicken.. I'm a chicken freak so I loveeeeee it 🤣 1 of my fondest memories growing up was my mom making it often & fried pork chops. Its crazy she didn't like it till she got married to my dad. I guess marrying a country boy herself changed her mind 💕

my mother's WESTERN Kentucky fried chicken beat the Colonel's Eastern Ky fried chicken any day.... I miss it... a lot. This is a wonderful process. I never new the oven was part of it either...THANK YOU so much. I don't cook, but you stir up fond memories.

We fixed this last night. Best fried I've ever had! We used boneless skinless thighs. The delicious breading actually gave it a skin on taste. The cinnamon pop is actually amazing. DO IT!

My mom was famous with the family for her fried chicken and she could cook 2 full chickens in one large skillet at one time, there were 2 layers.It was always fully cooked, tender, and the best golden crust ever. This was a nice video and made me hungry.

I am 68 and feel exactly the same. FINALLY!! Somebody let me know what I was doing wrong all these years. My husband of 46 years is thrilled because fried chicken is his very favorite food and he has had to endure all my past failures of trying to fry chicken. Now he can actually enjoy it. LOL!

I made this recipe today for supper and it was great! My family loved it! I made chicken nuggets with boneless chicken breast. The key is the marinating of the chicken overnight. It really does make the chicken tender. For the breading I did substitute the flour with House Autry Chicken Breader. I omitted the Cheyenne pepper and cut back the black pepper because I don't care for spicy food. I also added some Panko Bread Crumbs to the breading mixture. My sister and I still marvel at how our Mom had fried chicken for Sunday lunch after church at @1:00. Always a mystery. Rice, fresh beans, and homemade bread. Probably something sweet after (think that's all she ate). Mother's Day soon, always miss mine.

I tried letting my batter and flour mixture set on the chicken tonight hopping my crust wouldn’t fall off. Works like a charm letting it sit for a little bit before frying it. Thanks for the tip!! Love your recipes and channel. Keep posting!! God Bless

Fried chicken is soooo easy. It is my favorite food so I know what you mean. You don't really have to do all the steps in this video to have some of the best fried chicken you've ever put in your mouth! You can just season your chicken evenly with whatever flavors YOU like and set chicken aside. Get about 2 cups of flour and season it the same way that you did your chicken! Set aside. Take the chicken and coat it with the 2 cups of seasoned flour that you made. Make sure your oil is very hot and voila! You still get the crispiest, tastiest, chicken you can eat (without the egg and liquid). Trust me, I've been doing it for the last 53 years and it's good! It's traditional in my southern family. We just don't like the egg combo as it tends to get soggy and is thick for leftovers, and simply doesn't taste the same...But, I've had both and just give me the fried chicken!!!!! Cover chicken while cooking on low-med heat with aluminum foil. That makes the chicken inside to become very juicey! And, the outside is crispy crunchy! Once you add the chicken, wait a minute, lower heat, and cover. Cook at least 25-30 minutes and then turn. Repeat. When you turn the chicken you 'll have to raise the cooking oil up for a minute to keep it's "frying" temperature. Then, just turn it down, cover with the foil, cook for another 20-30 minutes or until it is the brown and crispy color that you think you like! My standard favorite seasonings for this I use Salt, Pepper, Garlic Powder, Onion Powder. You can always add in stuff that you like. Try chopping a fresh onion and putting it in on the second turn of the chicken. Your house NEVER smelled so good! Spice your chicken up or down! Dried ingredients like Chili's, Pakprika, Harissa, Cheyenne, Cumin, and lots of others, or simply marinade your chicken in fresh lemon juice, (just add less salt then). Simple, and 64 ways to do it and your chicken is THE BEST chicken you've ever eaten! Guaranteed! Cons: If you make it once, whoever eats it will request that you make it again!

Thanks for the tips. The finish in the oven is great👍. Takes away the pressure of bringing everything while hot when serving. Putting the spices in the buttermilk while marinating is great too. Giving you credit .

This is certainly different, I would have never thought of using cinnamon or honey in my fried chicken or pork chops. My mom and grandma used very few spices. I am a little more adventurous. @@theresadavis1425 Thank you Treasa so much for your prayers and kind words. Eric is a RN at a Nursing Home, 2 of his patients had COVID, he was wearing all of the protective gear, still got it. He had an appointment for his shot next week. Eric did have a turn for the worst yesterday. We do know God will heal him. He promised us when 2 or more of us come together, He hears us. It's amazing how many people are praying for Eric. He's in the hospital now and getting the care he needs. Great to have you as my Sister in Christ. 🙏🙏

I made this with boneless chicken breasts. They were YUGE so I had to keep them in the oven a while. But my family LOVED it. So I'm a new fan. Also, Jesus is King.

You are a joy to listen to and watch your expertise come together, almost effortlessly, from where I'm sitting. "In a perfect world" you'd be sitting at my table enjoying a chicken dinner. Never knew about the oven step. Never knew to use so much oil. Or the yummy spices. Or letting the chicken rest. My husband doesn't care for chicken...he says there's a good reason they call it "fowl"...but he may actually like this recipe and procedure you use. Thanks a heap, Becky !
