In US. USDA recommends against washing meat as it will get germs on everything else which is a much bigger hazard. Like vegetables or salads or cooked food. If its gone bad, dont eat it. Otherwise surface germs should be killed by cooking and internal if you cook it to recommended temp.

Afraid of your sink getting bacteria? Use soap and clean em! It's not that big of a deal lol.. It's the same with westerner not washing rice... If u know how rice are processed and packaged trust me you'll wash your rice throughly lol (yes even packaged expensive rice)

@ThePhiloSpheres i dab off any juice from the packaging with paper towels and only handle meat after all the other non meat things are prepped. But i also clean my rice because it makes it cook better But again, there's nothing in *cleaning* the meat that isn't done better by preparing and cooking it properly Cross contaimination is better handled by handling all ingredients properly as well as having clean surfaces. Having one and not the other doesn't prevent problems. Ive seen others say that they clean mean with citrus and salt, thats more of a preparation than a cleaning

In the Philippines, we wash them 3 times, strain the water out and do the first boil before cooking the meat. In Italy, they do like the Japanese people do but still use antibacterial spray to clean the kitchen

They actually teach this in culinary school because the bacteria does get spread by the water splashing everywhere or dripping onto food prep surfaces and its harder to completely clean it up that way

Not only that, but direct contact with water really screws up the texture of meats. Imagine taking a raw chicken breast and freezer burning it. That's basically what you did to it when you run it under water and make it lose it's pink color. That's also why you shouldn't thaw meats (with the exception of seafood) in water or direct contact with water. Washing skin is okay because skin is WAY more durable to the elements compared to muscle tissue, but generally, washing your meats is useless at best and a sanitation hazard/quality killer at worst.

In my country, we use to cut the bad parts of the meat, then put salt, cut parsley, pepper, pressed orange and pressed lemon in the good parts. We let it like that for some minutes. After that, we rinse it, then we put it on hot water.

The latest recommendation I heard is if you have to wash meat, put water in the bowl, then add the meat to the bowl. Never, ever run meat under the kitchen faucet.

As a Malaysian, we always wash our meat. Because here, it’s totally not cleaned. The chicken I get from the market still has like 20-30 feathers on it. Sometimes the fish still comes with scales on the belly. And there’s still so much drippy drip that you’d need a lot of paper towels to wipe it off.

In the caribbean we wash our meat before cooking as well. But "washing" isn't done like a bath or shower, its using something like lime, lemon, or vinegar to soak the meat which "kills" the bacteria and denatures the protein so the flavor goes in deep without years of marinating. Nothing gets splashed around, no area contamination.

Actually washing will require water and as we all know water is full of bacteria(s) as well…from my family’s elderly era we were taught that just use kitchen towel or clean-cooking-kitchen-cloth to pad dry the meat (e.g. fish, etc) and put meat into smaller portion of separate plastic bags in freezer to store away. When time for cooking, we take out the plastic bags based on the meat portion we want to cook then just cook it! By washing meat with water actually causes the meat’s freshness to be reduced and easier to be spoilt within shorter period of time, than not washing it at all. Btw, im a Malaysian living in the city (travelled & lived in other countries abroad) and not some outskirts forest area with lack of hygiene education ya…just thot I may need to clarify this…hahaha😂

This is true in America Germany Japan and a lot of countries with strict cleaning restrictions on food however in countries where the food may not be properly processed it makes sense to wash it but that’s not for bacteria more so for blood and physical objects that are inedible (rocks dirt etc) you most likely wouldn’t even get sick from that but it most likely taste better

@@dman5501North American here, my entire life I've never once washed meat. Patting it dry to get a better sear sure, or marinating it to tenderize it/ add flavor. But running it under water not only doesn't make it safer (reduce bacteria count) it can spread unsafe bacteria all around your sink(s). Basically washing meat is not harmful to the meat, but not helpful as when cooked to the correct temperature the bacteria dies anyways. And can be potentially harmful as most people don't clean their sinks/ counters well enough after washing.

I have lived with many different people from all over the world and seen some really ridiculous things in the kitchen. The worst is people who think that once they've rinsed the raw meat, it doesn't matter where they get it because now it's "clean" 😔

In the West Indies we combin water, lemon or lime juice in a bowl and put our meat in it and massage the lemon brine to "wash" the meat to avoid the odd smell meat has (if you know you know). We then drain it and GENTLY rinse the meat free of the lemon juice from the bowl. After we season our meat to marinate...we use LYSOL or BLEACH to clean our sink and surrounding area that could have been contaminated. 😊

As a former restauranteur, I took an exam to get a certificate in food safety. According to the experts, food contamination spreads more bacteria when meat is washed. No, it doesn't mean that if you wash the meat, then cook it, you will get sick. The concern is the higher risk of the contaminated water getting onto cutting boards, hands, knives etc. and spreading the bacteria due to negligence or unintended splashing etc. The only time I washed chicken leg meat was to properly defrost it. I did so by running cold water over the chicken in a clean bowl in the sink. Afterwards, I'd drain the water and batch cook all the chicken in oil on a flat top. I'm not saying this is the correct way, but it is what you learn to become a CFPM (Certified Food Protection Manager).

He gets me meat at a discount and I hold a cookout once a month for my friends and he brings his family over and we all have a big 3 day party and go swimming, eat lots of food and have lots of fun. And my daughter is now interested in cooking too and is planning on going to culinary school too.

same thing here in Brazil, it's better not washing meat to avoid cross contamination, some people still do but I've seen them put the meat in a bowl and try to wash the remaining drippy drippy stuff with lemon or vinegar but overall we get rid of the potential bacteria by cooking it in high temperatures and washing everything used later with soap or even cleaning bleach. I get that some places around the world might be different tho.

no? literally everyone I've ever known in my life soaks chicken in lime/lemon juice and/or vinegar, not to clean it of bacteria, but to clean off the bad smell and taste that chicken often has. after soaking it, you wash it with running water to get any left over blood out of the meat (this happens often with thighs). the same is done for fish.

Don’t wash because any splashes/ drips / specks of contaminated water can go on other surfaces and bacteria can remain deadly for days and be spread further if people touch the area and then touch door handles etc. Just pick it up straight from packaging and place in pan/oven, whatever you’re cooking with, then wash your hands and tap handle

For anyone not quite understanding what's going on, it also took me a minute to understand the full scope of the discussion from reading some of the comments. I think there are two different kinds of "dirty" being discussed: a) raw meat bacteria is what the woman is talking about b) dirt may be what the man is talking about, which doesn't really "cook away" the way she is talking about with bacteria. If you go outside and drop bacon (or other meat) on the ground and then immediately put it in the pan and cook it without washing it off, you're probably not going to enjoy the gritty texture added to the bacon. Because some of the comments stated that the meat in Malaysia is not trusted to be clean, this probably means that much of the meat production is done by individual people rather than in large factories the way it is done in other countries (such as Japan) that she would not be aware of if she just moved to Malaysia with him. Therefore, he's most likely concerned about actual non-bacterial reasons for washing the meat. I hope I understood the right information. If so, I how this helps anyone confused by the video like I was at first.

We soak it in some type of citric acid (lemon, orange, grapefruit, ...) then wash off the citric substance with potable water. And THEN we let the heat from cooking finish off whatever bacteria there may remain.

You don't need to wash your meat. The acid does nothing to get rid of bacteria, but it does tenderise the meat. If you're gonna do it, do it for that reason. Cooking kills all the food borne bacteria, there's no need to "wash" anything, nothing you're doing has any effect on the bacteria aside from potentially spreading it and increasing your risk of exposure.

I wash meat with cold running water and my hands to remove small bone chips when the meat is cut. They use electric saws sometimes at the butcher's. I wash chicken and turkey because I remove pin feathers and parts we don't eat such as lung, liver, gizzards, and heart. Always cook to the recommended temperature!

I never washed my meat. I think the concept of washing meat sounds weird. Whether you get fresh meat from the butcher or packaged from discounter, in Germany you can consume it without worries. If you miss handle it you might have to learn storage methods for meat first. Important rule for meat, consume it within two days. Don't buy it if you are not sure when you'll eat it.

Yeah, no. In Trinidad, we full a large bowl with water then add vinegar, lemon or lime to it then "wash" our meat. We NEVER wash meat under a running faucet. After, we add seasoning. Our seasoning is not just salt and black pepper, it's a mixture of thyme and other herbs. Then we either put it in a sealed container and store it in the freezer for later of let it soak until ready for use. These different food preparation methods have me paranoid about eating from anyone. Saw a video with a dude washing meat with dishwashing liquid. Glad it wasn't me he was trying to delete.

I know in the US a lot of people don't wash raw meat, but for those of us who do, we rinse the meat with cold water and salt/lemon juice since they both are good at killing bacteria. Afterwards we use hot soapy water to clean the area (sink, dishes, etc) to prevent the spread of bacteria.
