Really helpful - I do store ingredients rather than mixes, but just realized that how I put them together is mostly in my head. It’s hard to think when any sort of crisis hits, so … it’s time to turn all that into recipes. 👍 Kylene, you and Johnathan are excellent teachers and guides. Kylene: First consideration is the fat, second consideration is the leavening agent. I have used Bisquick that is 4 years old, but the leavening agent(baking powder) had lost much of its ability to rise. I added and additional 1-1 1/2 tsp. per batch of product that I used. So the short answer is, it still tasted ok after 4 years, but did not rise well. I would not recommend long term storage of that product. 4 years was really stretching the limit on quality and taste. Even when stored under ideal conditions. Your suggestion to store the components separately is great, so that one of the ingredients doesn't spoil the whole batch that could happen in a combined product.
@theoldguy9329
@theoldguy9329 8 күн бұрын
Baking powder lasts only about 2 years and OAs should not make a difference. Tradition baking powder is a combination of baking soda and cream of tartar that will store separately for decades. Mixed together they will react. You did a video on baking soda. I would note that on things like pancakes where you use an acid (like buttermilk) you can use only baking soda as you cook them quickly. BTW cream of tartar is potassium bitartrate and I suspect your NO OA as for the sodium bicarbonate would hold there too.

The "old flour" episode remains the favorite for some reason, of all of your videos. It was very informative and it caught a rather rare instance of aged food being opened, prepared, and consumed. Real data to build off, versus speculators from all who call themselves preppers, or experts. But I think my most favorite part of the video was Grandma. I only wished she had offered much more of a response. I am convinced she had aged much better than any of the flour!

I've wanted to know this because of the oils in it plus leavening. I would rather store plain flour and the leavening and fats separately. But 5 years might be useful.

Little things like this make me more appreciative of all these fresh foods we just have gotten used to taking for granted. Someday maybe we will just have to "make do" with what we can scrape together. There was a time when I realized my stored Bisquick would not last, so I began using it to bake up nutritious foods for the chickens. Adding eggs, ground shells, leftover this and that, freezer burn this and that. It was a good binder for "chicken cakes."

Huge question here. Almost five years ago I bought dried mango, dehydrated it more and stored it in mylar with an oxygen absorber. A couple of years later I offered it to my grown children and they said it was not safe to eat. I've researched and found some say it is and some who say botulism. Should I throw it out?
@TheProvidentPrepper
@TheProvidentPrepper 8 күн бұрын
Moisture content is important. It depends on how dry it was. This says dried mangos are about 16% fdc.nal.usda.gov/fdc-app.html#/food-details/169091/nutrients moisture. When you dehydrated them were they dry enough to snap or like fruit leather? That would have reduced the moisture content. Fruit usually isn't at high risk for botulism because of the pH. However ... if you are ever concerned it is always better safe than sorry. You should have shared with your mama! Love you!

@@TheProvidentPrepper Thanks. It was almost 1/2" cubes and coated in sugar. I dried it in my dehydrater for 12 to 16 hrs, then packaged it. Well, better safe than sorry.

Most dried fruits from the store are sealed in bags without any air exchange. Think bags of dried fruits from Costco. This is the same type of environment as your fruit. Why would the store bought fruit sealed in a bag be safe but the same fruit further dried then sealed again not be safe?
@justnana2256
@justnana2256 7 күн бұрын
@@ThirteenKidsLater Because it is not dried enough. There is still too much moisture and it is in an airtight container with an oxygen absorber. Botulinum is an anaerobic bacterium, meaning it can only grow in the absence of oxygen. Meaning that the chance is too great to take.
@ThirteenKidsLater
@ThirteenKidsLater 5 күн бұрын
@@justnana2256 but the principle of storing dehydrated fruit in airtight bags as purchased at store is the same. Those fruits as packaged are safe despite their moisture content. Further dehydrating then until crisp reduces the moisture content to below the threshold for botulism to grow.
