I'm a huge fan of nuts and seeds so it makes sense to include them in my prepper pantry. However, nuts and seeds tend to have a short shelf life due to the healthy fats that they contain.
In this video, I'll show you how I extend the shelf life of nuts and seeds by storing them in a low oxygen environment in a cool location.

I have always kept walnuts, pecans and almonds (all raw) in the freezer so they will be there when I want to use them. But recently, I vacuum-sealed some in jars and others in mylar with an oxygen absorber. I don't use them fast, so I hope this will keep them longer. I have them in my basement.

Thank you so much for sharing all this information. It surprises me that baking nuts would not extend their life. Baking them would remove most of their inner dampness and therefore extending their life. Thank you for any light you can shine on this and God Bless.

I have native pecan trees and have a bumper crop this year. I just canned 19 1/2 pt jars. For several years I have canned the pecans,after heating in over at 200 degrees just until hot. I use hot, dry, steralized jars and either pressure can or hot water bath can. They keep for years.

Maybe the reason it is ok to use O2 absorbers with nuts and seeds is because the oil in them has not been extracted. In other words, the oils in them are still part of the structure of the nut or seed. Other oily foods they have said not to use the O2 absorbers with were foods that had oil as an ingredient in them. I am guessing, but does that make sense?

My prepper pantry is growing rapidly and so is my peace of mind. One topic that I am NOT 100% certain of and 100% TERRIFIED of is..BOTULISM! I want to understand it completely so I am confident that it is NOT invited into my long term storage. I have a pretty good understanding of it with "wet" canning and reasons behind pressure canning vs. water bath. But I am lacking in understanding dry food storage. I understand the why behind boiling as a safe guard, but some dry foods (nuts as an example) aren't something I would boil? Do you have a video about this? If not, could you make one? Thanks :)

@@TheProvidentPrepper - Hi :) It is my understanding that Oxygen Absorbers and/or Vacuum Sealing DOES prevent moisture because moisture is H2O. And so without the O there can be no H2O. Now having said that... Oxygen Absorbers and/or Vacuum Sealing will get rid of over 99% of the oxygen, But there IS still a tiny bit of oxygen remaining which can eventually be a problem in the long run.
@gman21266
@gman21266 2 жыл бұрын
@@TheProvidentPrepper I'll do my best to explain my understanding of it: 1) Cooking the beans above 170 degrees for 5 or 10 minutes will kill any botulinum bacteria. However, that won't kill the botulinum spores. (But the spores aren't usually a problem for healthy adults). Now having said that... Oxygen absorbers will draw the oxygen out of air. But not out of liquids/foods. Vacuum sealing moist beans will extend the shelf life, but not by a whole lot. Maybe 3 or 4 times longer. But definitely not years and years, unless frozen. 2) Like many people, I keep my spare oxygen absorbers in a sealed mason jar. And sure enough, the next day I can see little droplets of liquid on the inside of the jar. So what gives??? How is there little droplets of H2O if over 99 percent of the O has been absorbed into the packets?? The only answer is that those droplets are not H2O. The droplets are liquified nitrogen due to the pressure drop. I hope this helps. 😁

Be careful storing anything that his a high level of moisture like raisins. They are short term. The method in this video will extend the shelf life of nuts and seeds but it will not make them store long term (20+ years). You can check the moisture content of many foods here fdc.nal.usda.gov/fdc-app.html#/food-details/173884/nutrients Long term storage items should be about 10 percent moisture or less. Best plan is to keep most dried fruits for short term and just keep them rotated. I would not use an oxygen absorber in raisins or anything that is moist.

@TheProvidentPrepper Sorry, that's what I meant, extend the life of them. With raisins, cranberries and the like, can they be stored in mylar bags/mason jars in a cool, dark cupboard or freezer, and if so, for how long? I'm in the UK.

@@michaelah523 Raisins and cranberries are pretty high in moisture. I vacuum seal mine in mason jars or store the ones I purchase in the original packaging. The cooler the temperature, the longer the shelf life. I usually count on 3 or 4 years. Indefinitely in the freezer. The high moisture is definitely a concern. Best to just rotate through them regularly and not take chances.

@TheProvidentPrepper so just to be clear, I can store them in mason jars or original packaging/mylar bags in the freezer, rotating them? Once I bring them to room temperature, and then store in mason jars in the cupboard, how long will they last then? I'm thinking I might split the bags into smaller portions if they've to be eaten within a period of time after freezing? @TheProvidentPrepper

Should you ever use a silica packet with nuts? With dehydrated almonds and walnuts vac sealed? Or raw pecans? .....in hot and muggy south :(

@@TheProvidentPrepper hello.... thank you! Yes, I recently learned of this method. I soak them in water a few hours first to start sprouting process said that this lessens the anti-nutrients, and stuff we don't want that are in some nuts. They come out very crispy and more easily digested. I don't eat them frequently so I'm trying to extend their storage as best I can!

I eat nuts and or seeds daily (restricted diet) & buy them in bulk from the health food store. I'm confused. I thought you could not store seeds and nuts in mylar bags with oxygen absorbers due to the high fat content. I noticed you did not put any oxygen absorbers in with your tiny bags of seeds. .?? Chia, flax, sesame, sunflower & pumpkin seeds? (Raw nuts in Mylar bags with oxygen absorbers but not roasted nuts, right?)❤

I have nuts in my freezer that’s been in their for about 4 years. I bought them on sale back then. Guess I better keep them in their. I don’t think it will be a good idea to remove them, thaw them for a few days and repackage. I think they’d go rancid. Right? Is my thinking process correct?
@LoisSilverman
@LoisSilverman Жыл бұрын
I would open them and smell them. They will smell rank if they went rancid which I doubt. I keep nuts in jars and bags in the freezer and pantry and they are fine, taste great! If you have more than one bag, try opening one and test it. If you haven't eaten them in four years, you probably won't ever eat them anyway. I am saying this from my own experience. I seem to always overbuy and then never use whatever it was that I bought too much of....lol!!!!

@@LoisSilvermanhi. Do you use OA in the jars and bags (mylar?) in the freezer? I've bulk bought a lot of nuts and seeds recently and came across this video, but in the comments, there seems to be a lot of confusion about whether to use OA because of botulism.

I still feel somewhat confused. I really need to know specifically. I put oxygen absorbers in mason jars with walnuts and reused jars were used to store planters peanuts also with oxygen absorbers. The peanuts are regular, not dry roasted so they do have oil. Also, I stored craisins in a reused jar where I also used oxygen absorbers. I packaged them between this past November and December 2023. Should I leave them? Should I throw them away or repackage them and use only mason jars and vacuum seal them. I would so appreciate your advice on this. Thank you!

All of the items you mentioned are short term storage items. I wouldn't throw them away because it has only been a few months. Reused jars may be just fine as long as they are air tight. You can check moisture content of foods here fdc.nal.usda.gov/fdc-app.html#/food-details/174262/nutrients I can't specifically advise you but understand that items that are good candidates for long term storage in a reduced oxygen environment are less than 10 percent moisture and low in fat. The beef jerky you purchase in the store almost always has an oxygen absorber in it. However it is only intended for short term storage.

@TheProvidentPrepper Would you please advise on storing dehydrated nuts long term. I have soaked them (walnuts and almonds) and dehydrated for 12-24 hrs till crisp and dry. Can I vacuum seal these nuts in mason jars with moisture absorber? I am trying to put away for baking Pantry in a shtf situation. Will this be a safe option? I really appreciate your response as I can't find any information on this.

They are super high in fat fdc.nal.usda.gov/fdc-app.html#/food-details/2346395/nutrients like around 73 percent. They are not going to store long term. I would just keep them with short term storage and keep them rotated. Perhaps vacuum seal them in mason jars would help extend the life but it won't make them store long term.
